Grilled Lemon Chicken

I've been making this recipe for years. In fact, I double or triple the recipe and DH and I reheat these for breakfast (w/melted cheese in a tortilla) or lunch. The protein keeps us fuller longer -- normally tough on a diet!

German Apple Cake II

Hubby needed a potluck dessert for an office contest and seeing all the good reviews on this, I made it for him. It won first prize! I followed some of the other reviewers' suggestions, so thanks to them, too. I used half cake flour and half all-purpose; four Granny Smith apples soaked in a couple tablespoons of Captain Morgan Spiced Rum; cut the oil in half w/half applesauce; used just a little more than half the sugar originally called for.

Easy Never Forgotten Guacamole

While this was a little on the bland side, the food processor whips the ingredients into a super-light dip. My picky 13-yr-old, who I thought would never try this went wild over it when I served it with warm tortilla chips. I threw in some fresh minced garlic, fresh cilantro. Next time I'll add an extra avocado or two, because there WILL be a next time! Thanks, Juleski!

Chef John's Chocolate Lava Cake

I was sorta unorthodox with this. I used Hershey's Dark Kisses. They were fine. I also don't see the need for the piping-with-a-baggie step; I just spooned it in. I'm curious about the need for a water bath, though, and am going to skip it next time. Some of the other reviews about this being overdone in certain ovens made me extra cautious, so I went with 14 minutes. Mine were majorly "molten," so I'll stick with the high-end directions of 18 min. next time. Never the less, everyone devoured them! This is on the menu for Valentine's Day.

Dessert for Dinner Sweet Potato Casserole

I have a similar recipe titled, "Pumpkin Crunch Souffle," that differs only in a large can of pumpkin puree instead of sweet potatoes. It's outstanding! My recipe goes into the microwave uncovered for 13-15 minutes. If you use pumpkin instead of the potatoes, be sure to let it cool off a little while because it will "weep" if it's still too hot. This is great as a side dish or dessert and is just like pumpkin pie but without the crust. You don't even notice the spices are missing! Thanks for posting, jaqpink. I live in mortal fear of losing my recipe!
