Janet's Rich Banana Bread

Reviewed: Sep. 21, 2014
I changed this up a bit. I used 1/2 cup brown sugar 1/2 cup white sugar, and added a heaping teaspoon of both nutmeg and cinnamon. My bread only took 50 minutes at 350. The kids loved it.

Blueberry Bread I

Reviewed: Jul. 27, 2014
Like all the recipes I come across I use them as base recipes and tweak them based off of my families taste buds. With this recipe I use 1/2 cup brown sugar and 1/2 cup white sugar. I also add 1 tsp of vanilla, 1 tsp of nutmeg and 1 tsp of cinnamon. Today was my 3rd time making this in a month and made them into muffins instead of bread. Thank you!!!

Downeast Maine Pumpkin Bread

Reviewed: Apr. 29, 2013
I have been making this recipe for almost 2 years now. I do modify it a little. First I use 2 cups fresh pumpkin puree, I used 1/2 cup unsweetened applesauce, 1/2 cup veg oil, 1 1/2 cups light brown sugar, 1 1/2 cups sugar. My kids love the spice aspect so I use 1 1/2 teaspoons of both cinnamon, and nutmeg, 1 teaspoon of cloves and a 1/2 teaspoon of ginger. I mix all the dry ingredients together and sift before mixing into the wet ingredients. Also I only bake for approx. 35-38 minutes if I'm making 3 loafs, and 45-48 if I'm making 2.

I used 1 cup white sugar, 1 cup brown. 1 cup veg oil, 1 cup unsweetened applesauce. 3 heaping teaspoons of cinnamon, 1 teaspoon of nutmeg, 1/2 teaspoon of ginger, and 4 cups zucchini. Instead of making them in to loafs I made 24 muffins baked at 325 for 20 minutes. YUMMY!!!

Peanut Butter Fudge III

Reviewed: Nov. 25, 2012
AMAZING!!! I did change it up just a tad. I used 1 7oz jar of marshmallow crème, and used salted butter instead of margarine. I also boiled for 7 minutes. I might try 8 minutes this time. I just made it on Sunday and here we are Tuesday night and I'm making a second batch. Thank you!!!

Seven-Up® Cake II

Reviewed: Sep. 3, 2012
I made this last week. There was way to much batter and it over flowed all over my oven. Also I did not care for the texture or flavor of the cake.

Chewy Chocolate Cookies I

Reviewed: Sep. 2, 2012
I gave this 5 starts because of the modifications I made. First I used 1 cup sugar, and 1 cup brown sugar, 1 1/4 cup of flour, 1 cup of unsweetened cocoa powder and used 1 package of milk chocolate chips. I also stuck the dough in the fridge for 15 minutes before my first batch went into the oven and kept the rest in the fridge while the others were baking. Since I kept the dough in the fridge it took 12 minutes to bake. The cookies came out nice, fluffy and very rich and I got 67 cookies!!!

YUMMY!! I used 1 cup butter on accident so I decided on not using the shortening. I also added the hot fudge topping prior to adding the milk. This is a keeper!!!

Corned Beef and Cabbage I

Reviewed: Mar. 18, 2012
I made this last night with a few modifications. I have never eaten corned beef and cabbage so it was a new and exciting experience for us. I used water as directed but added 1 1/2 heads of garlic and 2 whole onions halfed to the broth. I also added the spice packet. I rinsed and dried the beef before putting it into the water. I also took the beef out after 3 hours of cooking and placed it under foil to rest. During that time I cooked the potatoes and carrots for approx 15 minutes and then added the cabbage for the remaining 3 minutes. It was perfect. My 20 month old daughter ate 4 pieces of the beef however my picky 5 year old daughter had issues with the texture of the meat. All in all I would make again!!

I made this yesterday for the first time. Holy yummy!!! The only thing I changed was used an egg white wash instead of the egg yolk and then sprinkled powdered garlic and cornmeal on top. I'm making another batch today to go with pasta!

Easy Slow Cooker French Dip

Reviewed: Oct. 21, 2011
This was OK, I seasoned the meat with salt, pepper, and garlic and then seared the meat before putting it into the crockpot. We had to add a lot of seasonings to the broth and it still seemed bland. I think I will stick with getting roast beef from the deli at the grocery store and then buy the packet of broth.

Slow Cooker Pulled Pork

Reviewed: Oct. 19, 2011
Very good, however I'm glad I put salt, pepper, and garlic on the pork roast before I put the root beer in. I used 2 cups root beer next time I think I will use more. It was so nice not having to worry about dinner at the last minute!

Iced Pumpkin Cookies

Instead of canned pumpkin I used 1 cup of fresh sugar pumpkin puree, I did not have enough cinnamon so I used allspice in its place. I also added nutmeg and a little cinnamon to the icing. AMAZING!!! I can't stop eating these cookies.

Garlic Chicken

Reviewed: Sep. 21, 2011
This is a fantastic base recipe. However after reading previous comments I decided to make a few adjustments. I used 8 cloves of crushed garlic, put them into about 1/3 of a cup of olive oil. Took that to a boil and took it off the heat to cool down. I put salt, pepper and powdered garlic on both sides of the chicken and then placed into the olive oil mixture. The only adjustments I made to the bread crumb mixture was to season the bread crumbs with pepper and powdered garlic and I used extra parm cheese. Also I cook my chicken breasts at 375 for 30 minutes they are always juicy yet cooked through. My kids and husband loved it!!!
