Potato Chip Chicken Casserole

Several reviewers have noted the fat content of the recipe. Here are some ways to trim it a bit: Use reduced-fat cream of chicken soup, substitute plain Greek yogurt for the mayo, and use reduced fat (2%) cheddar cheese. Then top with crushed baked potato chips. I've made this recipe through the years and always omit the water chestnuts. To me they do not add much flavor and will turn soft and 'sour' when you try to re-warm the casserole as leftovers.

Spanakopita (Greek Spinach Pie)

As another reviewer or two have mentioned CHILL the spinach mixture in the fridge before assembling it with the phyllo for baking. This is a wonderful recipe -- and very close to the classic -- and well worth the effort.

Crab and Lobster Stuffed Mushrooms

Very good recipe. If you wish omit the garlic and substitute a couple of tablespoons of minced onion or a tablespoon each of minced onion and finely diced bell pepper. Great tip for this and other recipes with canned crabmeat: To remove the 'canned taste', drain the liquid from the crab then soak the meat in ice water for 5 to 10 minutes. Drain the water and pat the crabmeat dry. No more canned flavor!

E-Z Drop Biscuits

Substitute 2 cups SELF-RISING flour and OMIT the baking powder and cream of tartar for very light and delicious biscuits. Also, lowfat or skim milk as well as lowfat butter work well in this recipe.
