Chicken Salad with Couscous

Even my picky eater dh liked this one. Because I am gluten intolerant, I substituted brown rice for the couscous. I also used 3 cloves of garlic because I love garlic. I used canned chicken, but acknowledge that using fresh chicken might taste better.

Sweet-and-Sour Coleslaw

Awesome. Even the dh, who doesn't really like veggies, said it was good. That says a lot. I substituted half and half red and regular cabbage. I also used stevia instead of Splenda.

Chicken Wild Rice Soup I

I added 1 tsp of sage. Because I am allergic to dairy, I used olive oil to stir fry the veggies and left out the cream. I left out the flour as a thickening agent, because I am gluten intolerant. It probably results in a little different flavor, but is still chicken soup.

Vietnamese Chicken Cabbage Salad

This is wonderful and so easy to make. I used 2 small red onions and added a green pepper. I also had some leftover carrots, so I shredded one with my shredder and added it. My dh said, "it's coleslaw!" LOL!

Caron's Kickin' Quinoa Salad

Made this tonight for a quick dinner, as I had to go back to work for the night shift. Very easy and fast to me. Not sure if the hubby liked it, but he ate it. Will make again. Didn't use wasabi this time. Not sure where to buy it, but will try it when I do find it.

Kale and Feta Salad

This is delicious. Thanks for sharing the tip about massaging the kale. I have disliked eating kale for years because of its taste. I will like eating every week for years to come now. I could not find currants where I live, so I used strawberries. I am not sure about the difference in taste, as I have never had currants, but it is quite good. I also substituted walnuts for pine nuts.

This is a delicious recipe that could be easily modified by using chicken or pork instead of beef. I also found it quite tasty to use quinoa instead of rice.

Chicken and Black Bean Casserole

I did not put in quite as much chicken as the recipe says. I also added garbanzo beans for more fiber and protein, but less fat and cholesterol. I substituted a green pepper for the chile peppers.

Chicken Jalfrezi

Smells and tastes absolutely wonderful. I think even the hubby, who doesn't usually like really spicy food, will like this one. I made this recipe for the first time several week ago. This time, I made it with half chicken and half lentils. It didn't really change the flavor much, but less fat and cholesterol should help my hubby who is trying to lose weight and get his cholesterol down.

Quick Quiche

Mine turned out pretty good. Even my husband, who is a nonadventurous eater, liked it. I am allergic to milk, so I substituted water for milk and left out the cheese. I also substituted gluten free flour, which did not work as good. Next time, I plan to try a gluten free pizza crust in the pie pan.

Awesome. You can also change it up a little bit. If you don't have potatoes, you can use rice. But I do prefer to make it the way it is written. Freezes well and packs into lunches well.

Goulash

I doubled up on the salt and pepper, because it was a little bland, but other than that, it is great. I also left out the corn, because I can't eat it and it tastes fine without it. Can substitute brown rice for the pasta if you need a gluten free option.
