Light Wheat Rolls

These rolls are fabulous. They taste like restaurant quality. I didn't bake them in the muffin tins - just on a cookie sheet and they turned out so good. I topped mine with olive oil. You have to make these - they are worth the effort!

Chicken Parmesan

This was fantastic! Like other reviewers, I mixed 1/2 panko with 1/2 italian seasoned bread crumbs. I also seasoned my flour with pepper and garlic salt. I didn't measure my oil and I also added some butter and I pan fried 1-2 min/side. I sprayed my dish, then put some tomato and basil spaghetti sauce on the bottom of the dish, covered with the chicken, covered with sauce and covered with shredded italian cheese mixture and baked for 15 minutes. Everyone loved it. Kids gobbled it up and husband said to add it to the rotation!

Creamy Chicken and Wild Rice Soup

This was AMAZING! I added carrots, used thigh meat and 1/2 and 1/2 instead of cream. I think this was the best soup I've ever prepared.

Iced Pumpkin Cookies

These were really good! For some reason I was craving pumpkin the day after Thanksgiving and wanted to try something different. I only had 1/2 cup of white sugar so used 1 cup of light brown. I also used 2t of pumpkin pie spice in place of the 1/2t nutmeg and 1/2 cloves. I didn't ice these and my kids (and myself) gobbled these up.

Chinese Shrimp and Tofu Soup

This was wonderful! I used more garlic, shrimp and tofu and omitted the ginger (we're not fans). I cooked the shrimp and garlic in sesame oil and used soy sauce to add flavor to the soup. I didn't have any peas so used some corn and spinach. It was restaurant quality!

Amusement Park Cornbread

I've been making this for years. I do as others, decrease flour by 1/2 cup, add 1/2 cup cornmeal. This is a sweeter cornbread but that's how we like it. I agree that the baking time is off if you don't make these into muffins. 20 minutes is perfect for a dozen muffins.

Shrimp Scampi Bake

Grilled Marinated Shrimp

Very good!!! I made the marinade as written but used ketchup instead of tomato paste and only used 1# of shrimp. Boiled the rest of the marinade and served over pasta. Fantastic dish!

Delicious Ham and Potato Soup

Very easy and very good! This really surprised me at how tasty it was. I will make this again. Tonight I made it with turkey bacon instead of ham, no celery an instead carrots. Kids gobbled it up.

Out of this World Turkey Brine

This was easy and the turkey turned out great! I made a single, bone-in, turkey breast so I scaled the recipe down a good bit. I used regular salt as that was all I had. I brined it in a 'turkey' oven bag and placed that in a 9x13 dish. I turned the breast over 2-3 times in the 2 days it was in the brine. I cooked the turkey in another bag in the oven. It was very juicy and tasty! I would brine a turkey again!

White Chocolate Raspberry Cheesecake

this was soooooo good! it wasn't beautiful (it cracked even though i left it in the oven - but i didn't care) but it tasted sooo good! i doubled the white chocolate and used strawberry preserves that i just 'swirled' in.

Chicken With Mushrooms

We LOVE this at my house. I saute mushrooms and 1/2 a chopped onion in some oil, adding garlic in the end. Then I transfer to a dish and brown my chicken (just dredged in some seasoned flour). I then remove the chicken, deglaze with the broth and then add it all back in, cover and throw in the oven for 30 minutes. I top it with shredded mozzarella after taking it out, put the lid back on for a few and then mix it all together. Serve with buttered noodles. My kids love it and gobble it up. Son (6) had 3 helpings tonight!

Bodacious Broccoli Salad

This really was good. My husband enjoyed it even though he's not a big fan of raw broccoli. Took it to a potluck and everyone said it was their favorite dish of the evening. I used precooked/crumbled bacon and light mayo.

Salmon Cakes by Melt® Buttery Spread

I've never made salmon patties before because the thought of using canned salmon is a bit gross to me. I was happy to come upon this recipe and it was very tasty; a tad bit too salty so next time I won't add as much as the recipe calls for. I used panko bread crumbs and melted butter.

Overnight Apple Cinnamon French Toast

This was great; although I did make a few changes. I used 1/2 cup butter and also added 1 tsp pumpkin pie spice to the sugar mixture. I spread this on the bottom of an 9x13 dish. I then added thinly sliced apples all over this versus using the pie filling. I mixed the egg mixture as written but added a tsp of pumpkin pie spice to this as well. I used thinly sliced challah bread and dipped it in the egg mixture. I ended up with two layers of this and poured the little bit of egg on top. I sprayed the foil and in the fridge it went overnight. Straight in the oven for 60 minutes covered and then uncovered the last 10. I cooled for 5 minutes and flipped it over as I plated it. It was plenty sweet without the apple pie filling and no maple syrup either (almost too sweet). Everyone gobbled it up. I like that you can literally just throw it in the over straight from the fridge in the morning versus having to sit out like other morning casseroles.

Slow Cooker Turkey Breast

Oh my gosh, this was FABULOUS!!! I used a 4.5# turkey breast and one packet of onion soup and stuffed it in my crock pot and it was so juicy and tender and seasoned perfectly! I used the drippings to make a great gravy. Nothing was bitter, it wasn't overly salty (for our tastes) and it was the juciest whitemeat i've ever had. Christmas dinner can't get much easier than this!

WONDERFUL! I forgot the last step (egg yolk/water) and left out the nuts and these are great! Very easy to make and so good dipped in my home-brewed latte!

Apple Raisin French Toast Strata

Very good. Not soggy at all. I did 6 eggs, added vanilla to the egg mixture. I also creamed the cheese with some sugar and cinnamon per other reviews and spread this on the bread before cubing it. I baked it at 350 for an hour and it was perfect! Wonderful xmas morning breakfast, I made it yesterday and it sat in the fridge for over 16 hours before I baked it this morning.
