Chicken With Mushrooms

We LOVE this at my house. I saute mushrooms and 1/2 a chopped onion in some oil, adding garlic in the end. Then I transfer to a dish and brown my chicken (just dredged in some seasoned flour). I then remove the chicken, deglaze with the broth and then add it all back in, cover and throw in the oven for 30 minutes. I top it with shredded mozzarella after taking it out, put the lid back on for a few and then mix it all together. Serve with buttered noodles. My kids love it and gobble it up. Son (6) had 3 helpings tonight!

Ghirardelli Chocolate Mousse

This was really good!!! I had the same issue with bits of chocolate in my mousse but wasn't bothered by it. You are to use the 4 eggs whole, do not just use the whites like the one reviewer wrote. My thickened up just fine in the fridge.

Rich Italian Sausage and Potato Soup

Very good soup. I subbed bacon for the pancetta (and more then was called) and spinach for the kale. I loved it. Topped it with parm cheese. My kids thought it was just ok. Husband enjoyed it.

Creamy Cheesy Grits

These were fantastic! Very creamy and flavorful. Like the previous reviewer, my total time to prepare this dish was only 10 minutes. I can't wait to pair these with shrimp. So good!!

Artichoke Spinach Lasagna

I used chicken broth, a package of baby spinach cut up, quartered artichoke hearts drained and chopped. I did not cook my noodles and it was not overly soggy. Next time I'll add in ricotta to make it more lasagna-like. It was very good. I omitted the rosemary and used basil instead. We enjoyed this.

Smothered Bacon Chicken

Very good, everyone loved it! (what's not to love?!) I used boneless/skinless thighs, topped it with bacon and then I mixed up my own cream of mushroom since I don't buy it in a can. I sauteed baby bellas in butter, added flour to make a roux and then milk. I mixed that with the sour cream and topped the chicken. Baked it as directed. Very flavorful!

Tex-Mex Quinoa Salad

This was just ok, served it warm, with tortillas. I still haven't found a recipe made with quiona that just knocks my socks off...I'll keep looking. Edited and added a star. I stored the leftovers in the fridge and it was much better reheated a day later. It was overly runny when I first made it, but reaheated, it had a much better consistency. Still unsure if I'll make it again as my kids didn't really dig it.

Chicken David

This was good. I made it as written with only a few changes. I cooked the chicken in olive oil first, until browned on both sides. I removed the chicken and then added a bit more oil and cooked the onions, etc. I then added the chicken back to the pan for 5 min each side (my breasts were thick). I had no salami so I left that out, but otherwise, followed as written. Next time, I'll pound my breasts thin. Served with thin pasta. Wish the kids liked it....

Spinach and Mushroom Quesadillas

Very, very good and easy. Entire family (kids ages 4 and 6) gobbled them up. Used baby bellas, frozen spinach and mexican cheese mix. No oil necessary to pan fry them and dipped them in a bit of sour cream.

Baked French Toast

This was easy to make and the family enjoyed it. Used challah bread, cut down the liquid to 6 eggs, 1 and a quarter cups of milk and 1 cup 1/2 and 1/2. I baked it as is for 20 minutes, then poured the syrup on top (i only used 1 stick of butter and 1 cup of brown sugar and 2T corn syrup). Baked it for 20 more min. It wasn't as soggy this way.

Blueberry Blintz Souffle

this was just ok. It had tasted like blintzes somewhat, but reminded everyone of just cheesecake here. the flavor was good but I'd rather just make blintzes or make cheesecake.

Herbed Pork and Apples

This was a very good dish. I was afraid the pork would be dry as I prepared it in the morning and reheated it for dinner -but it was very moist. I did not have apple juice or pure maple syrup so for the "gravy" I used water and and regular pancake syrup - it was very good. I will make this again.

Light Wheat Rolls

These rolls are fabulous. They taste like restaurant quality. I didn't bake them in the muffin tins - just on a cookie sheet and they turned out so good. I topped mine with olive oil. You have to make these - they are worth the effort!

Jalapeno Popper Spread

I made as written except adding an entire 4oz can of chopped jalapenos versus 2oz. It is very good but quite rich even though I used 1/3 less fat cream cheese. Next time I will use in a larger pie pan versus a smaller round dish b/c the topping was too thick and it needs to be thinner.
