Sweet Green Bean Bundles

These were a nice change from the typical green bean casserole at thanksgiving. They were easy to prepare (I used frozen whole green beans which I thawed slightly before making my bundles) but a bit too sweet for my taste. I agree with the others who say to put it under the broiler to further crisp the bacon.

Creamy Macaroni and Cheese

The sauce was cheesy, but not creamy - a bit grainy and i whisked and whisked it. i'm hoping to find a recipe that mimics a home cooked mac and cheese like you would find at a bar-b-que joint in the south - and this recipe was so not it.

Black Bean and Corn Salad II

This was very good. Can be used as a salad or a main dish. for those of you who need meat with a meal, grilled chicken would be nice added to it. I also swapped the lime juice and the oil. Great for a summer dinner!

Cracker Candy

I'll have to try this again with the brown sugar. It was ok but I've had it before made with brown sugar and it's much better. I also don't think I cooked it long enough - did the 3 minutes but must have started it early - it's not as crunchy as I'd expect. I want to try this over graham crackers too.

Hot Sausage Dip

took this to a superbowl party - it was average - a bit too salty for my taste. guess the combo of processed chesse and sausage will do that to you.

Bodacious Broccoli Salad

This really was good. My husband enjoyed it even though he's not a big fan of raw broccoli. Took it to a potluck and everyone said it was their favorite dish of the evening. I used precooked/crumbled bacon and light mayo.

Creamy Au Gratin Potatoes

These were pretty good. Reminded us more of a potato soup than a gratin. next time i'll stick it under the broiler for a few minutes to brown the top.

Whipped Cream

This was much easier than I expected. I placed my wisk and metal bowl in the freezer for 30 minutes and then before I knew it we were eating fresh whipped cream. I also added an extra tablespoon of sugar to make it sweet enough for our liking.

Amusement Park Cornbread

I've been making this for years. I do as others, decrease flour by 1/2 cup, add 1/2 cup cornmeal. This is a sweeter cornbread but that's how we like it. I agree that the baking time is off if you don't make these into muffins. 20 minutes is perfect for a dozen muffins.

Cajun Seafood Pasta

I have now made this a few times and it is so good! I used dried herbs, no onions and no parsley. I also used 1lb of each shrimp and sea scallops (frozen and then thawed from sams). You can always add a bit of extra cheese to thicken the sauce to your liking. This is better than any seafood pasta dish i've eaten out. Very impressive.

Beef Fillets With Stilton-Portobello Sauce

Downeast Maine Pumpkin Bread

This was very good but I did change it a bit. I only used 1 1/2 cups sugar (everyone said it was sweet). Next time I'll try 2 cups and it should be perfect. I also used 2 cups whole wheat flour and 1 1/2 cups AP flour. I used 1/2 cup oil and one chopped up apple - next time I'll use 2 apples b/c it was a very nice addition. The bread was still very moist and had a wonderful flavor.

Herbed Pork and Apples

This was a very good dish. I was afraid the pork would be dry as I prepared it in the morning and reheated it for dinner -but it was very moist. I did not have apple juice or pure maple syrup so for the "gravy" I used water and and regular pancake syrup - it was very good. I will make this again.

Buffalo Style Chicken Pizza

This is a wonderful change to plain pizza! I did not use an entire bottle of dressing but just enough to cover the dough. I also added some crumbled bleu cheese to the top. Instead of hot sauce I used texas pete wing sauce. It was great!

Light Wheat Rolls

These rolls are fabulous. They taste like restaurant quality. I didn't bake them in the muffin tins - just on a cookie sheet and they turned out so good. I topped mine with olive oil. You have to make these - they are worth the effort!
