Chocolate Chip Pumpkin Bread

I wasn't overly impressed with this - it wasn't as moist as I'd like and IMO there was too much nutmeg and it covered the pumpkin flavor. Something was missing in this and I'm not sure what it was but I won't be making it again. I made the recipe as written but made 12 muffins and 3 mini-loafs -they baked just fine - just were missing something in the taste.

Traditional Mashed Potatoes

Very basic, very easy and very good! I added some extra butter and used my kitchen aid to 'mash' them. They were great!

Out of this World Turkey Brine

This was easy and the turkey turned out great! I made a single, bone-in, turkey breast so I scaled the recipe down a good bit. I used regular salt as that was all I had. I brined it in a 'turkey' oven bag and placed that in a 9x13 dish. I turned the breast over 2-3 times in the 2 days it was in the brine. I cooked the turkey in another bag in the oven. It was very juicy and tasty! I would brine a turkey again!

Aunt Millie's Broccoli Casserole

This was bitter tasting for us. Not sure if it's because I made it the night before or not. I used frozen broccoli that I slightly cooked first, shredded cheddar and followed the rest of the recipe exactly. I ate my serving as did my husband, but my kids, who love broccoli, didn't eat one bit. We threw what was left out. I won't make it again.

Slow-Cooker Barbecue Ribs

I made the sauce as written except I added a bit less ketchup and added a little bit of grape jelly - I also left out the hot sauce - they were GREAT!!!!! I made them a few weeks ago, and I'm making them again for tomorrow!

Spinach Chicken Parmesan

The flavor of the chicken was bland but if I could only rate the spinach, I'd give that 5 stars! The spinach was fabulous!!! I also added garlic to the spinach and doubled it. It was nice with the chicken but the chicken itself, was missing something, hence the 3 stars.

Fried Rice with Cilantro

I made it as directed but I did add an egg, and use a bit less oil as others suggested. I'm only giving it a star b/c I have to give it something. I wouldn't suggest this to anyone - and I LOVE CILANTRO!!!!

Thick Chocolate Pudding

this is really good, really easy and much cheaper than buying the packaged pudding powder - and tastes just as good. Just watch it and don't overcook it - in my microwave the first 3 minutes is usually enough.

Pesto Polenta Lasagna

I wasn't overly impressed with this dish. I used good pesto and good sauce and that'a about all I noticed about the dish - my pesto and marinara went well together - the polenta didn't really do anything for the dish and it wasn't 'lasagne-like' for me. Maybe if we couldn't eat gluten we'd enjoy it more but I'll just stick to regular lasagne and find another use for polenta.

Chicken and Bacon Shish Kabobs

this was really good!! I doubled the marinade and added garlic to it and left the chicken and mushrooms marinate for a few hours. It was a bit of a messy assembly but the taste was fantastic! We used metal skewers also and had no problems. Everyone loved them - we also marinated them throught the grilling process. Will make again as it's much tastier than the usual hot dogs and burgers!

Strawberry Chocolate Mousse Cake

I used crushed graham crackers for my crust and it does make a beautiful presentation. The taste is great but my mousse ended up a tad grainy so I may use my mixer when adding the chips to the corn syrup - or maybe just try a better chip? I wouldn't mind this being made with even darker chocolate. I also used canned whipped cream for the top. I was just whishing for a moussier mousse - but it was probably something I did wrong.

White Chocolate Raspberry Cheesecake

this was soooooo good! it wasn't beautiful (it cracked even though i left it in the oven - but i didn't care) but it tasted sooo good! i doubled the white chocolate and used strawberry preserves that i just 'swirled' in.

Avocado Feta Salsa

this was very good but i wouldn't call it a 'salsa' but a chunky guac. I made it for my book club and it was all gone - and I doubled the recipe! I used clintro instead of parsley and green onions instead of red.

Slow Cooker Turkey Breast

Oh my gosh, this was FABULOUS!!! I used a 4.5# turkey breast and one packet of onion soup and stuffed it in my crock pot and it was so juicy and tender and seasoned perfectly! I used the drippings to make a great gravy. Nothing was bitter, it wasn't overly salty (for our tastes) and it was the juciest whitemeat i've ever had. Christmas dinner can't get much easier than this!

Butter Snow Flakes

These were GREAT!!! I have a pampered chef press and the dough was perfect and i've had problems before with other recipes. The only change I made was lemon extract, not orange. They are very tasty!

Jenn's Out Of This World Spaghetti and Meatballs

I only made the meatballs - added them to some jar sauce - it was FABULOUS!!! After rolling the meatballs, I placed them on a cookie sheet that I stuck in the freezer until they were firm and I put 1/2 of them away in a freezer bag to use at a later date. My 20 month old that usually only eats chicken woofed down 2 of these!! I will make these again - a nice change to regular pasta with meat sauce or sausage.

To Die For Blueberry Muffins

These were very good. The changes I made were that I used olive oil (that's all i keep in the house), I added an extra big splash of whole milk (the batter looked really dry to me), added a splash of vanilla, and added extra blueberries. I also 1/2'd the topping (made with smart balance and not butter). I made 6 huge muffins and they are moist and not cake like at all. I did have to bake them nearly 15 min extra but that may be b/c I only made 6.

Slow Cooker Chicken and Dumplings

I thought this was great! I changed it just a bit - used boneless skinless thighs that I cut up into thirds (used 2 pounds), added peas, no onion, added salt, pepper and garlic powder and cooked on high for only 3 hours. I cut up 4 frozen biscuits (while still frozen) and added them after 1.5 hours. With 30 minutes to go, I stirred it all up. It came out very tasty, not at all bland, the meat was moist and everyone, including my 13 month old gobbled it up. I would probably quarter 6 or 8 biscuits next time b/c they turned out so good. This is a quick throw-together dinner when you can't figure out what to make - I had everything in the house already. Can't wait for the leftovers!!!
