Sloppy Joes II

Very easy and good. I omitted the green peppers and next time I'll use a tad bit less brown sugar. It was a bit too sweet for our taste. Otherwise, fantastic!

Apple Raisin French Toast Strata

Very good. Not soggy at all. I did 6 eggs, added vanilla to the egg mixture. I also creamed the cheese with some sugar and cinnamon per other reviews and spread this on the bread before cubing it. I baked it at 350 for an hour and it was perfect! Wonderful xmas morning breakfast, I made it yesterday and it sat in the fridge for over 16 hours before I baked it this morning.

Roasted Brussels Sprouts

Beyond wonderful and super easy! I have never made or eaten brussel sprouts and decided to try something different for my Xmas dinner. I'm so happy I did. They were so fabulous!!

Rich Italian Sausage and Potato Soup

Very good soup. I subbed bacon for the pancetta (and more then was called) and spinach for the kale. I loved it. Topped it with parm cheese. My kids thought it was just ok. Husband enjoyed it.

Chicken Breasts in Caper Cream Sauce

This was decent. I dredged boneless/skinless thighs in seasoned flour (seasoned with lemon pepper, salt and thyme as I had no dill). I then pan fried these in a little olive oil and then followed the sauce recipe as written (doubling it) except only putting in 1T of capers (had never had a caper before and wasn't sure we'd enjoy them). My kids didn't like the capers, but I thought they were nice with the sauce, giving it a nice salty flavor. Otherwise, to be honest, it was just pan fried chicken with a basic creme-based sauce. Nothing overly fancy or special. The lemon-pepper didn't stick out to me at all. Don't get me wrong, it was good.

Overnight Coffee Cake

This was good. I liked making it the night before and then just throwing it in the oven. I followed directions exactly. Next time I might do 1/2tsp nutmeg and 1/2 tsp cinnamon in the batter. The cake was moist. I think one could 1/2 the topping and it would still be sweet enough.

Chicken Tortilla Soup V

Quick and easy. I used 4 thighs b/c I prefer the flavor. Everyone ate it. I might add black beans next time, but that alone might turn my kids off....

Pumpkin Apple Streusel Muffins

I made this as written. The muffins were good, but took nearly an hour to be done (and my muffins weren't huge). My husband had no idea they were pumpkin muffins. They tasted more like gingerbread to us. I'm guessing this might be b/c of my pumpkin pie spice. So they were good gingerbread apple muffins.

Pumpkin Pancakes

These were a bit dense. Next time I might add an extra egg per other reviewers or I might just take my regular pancake batter recipe and doctor it to make pumpkin pancakes. Not a hit here at my house, made as written.

Banana Banana Bread

I halved the recipe because I only had 2 bananas. I also added some vanilla, nutmeg and cinnamon and sprinkled a bit of brown sugar on top. I made muffins and they were very good!

Incredibly Cheesy Turkey Meatloaf

Very good. I mixed 1lb ground beef with 1 lb ground turkey (that's all I had on hand), put the bread crumbs in the milk, added some garlic and worst. sauce and per other recommendations. This makes a lot. I opted to put it in a small oval shaped corning ware dish (bigger than a loaf pan) and didn't have any bubble out (used cheese cubes). I topped with bbq sauce and baked an hour. It was very good.

Strawberry Vanilla Pancakes

These were good. I doubled the recipe and followed it exactly except didn't put in as much oil. The batter was thin and lumpy but they did fluff up without issue. Everyone liked them.

Banana Crumb Muffins

These were good, nothing amazing or spectacular, but a good, easy recipe with ingredients that I usually have in the house. Nice and moist. My son is on his third, daughter is on her second. I also added cinnamon and vanilla to the batter but it still could have used a little more.

Ricotta Gnocchi

Wonderful!! Made this tonight, doubling the gnocchi recipe (using fresh garlic and not measuring salt and pepper)....my kids loved it. I can't say they were pretty or traditional in shape, but they tasted so good!!

Sole In Butter Sauce

I agree with others, sauce was very good. I pan fried my fish and to the residual oil, I added a stick of butter and finished the sauce as written. I did add some cornstarch to thicken it. Served with broccoli and the sauce was good with that as well. Added to recipe box for the sauce....

These were great and the recipe was very forgiving. I don't cook with shortening so I used all butter. I also ran out of white sugar so made them with 1/2 white and 1/2 brown. They were then rolled in cinnamon and brown sugar. I also subbed lemon juice for the cream of tartar and had no issues with them being too flat. I baked them 400 degrees for 9 minutes and removed them asap to a rack to cool. I stored them in a zippered plastic bag and now, 4 days later, they are still as good as they were the first day. Very good cookie!

All American Apple Pie

I loved the topping to this! I used 6 apples (not sure what type since we had picked a variety). Next time I'll add a bit less sugar. I added some cinnamon to the top, used a store bought crust and added the cornstarch and lemon juice and cooked over low heat as others suggested.
