Chicken Parmesan

This was fantastic! Like other reviewers, I mixed 1/2 panko with 1/2 italian seasoned bread crumbs. I also seasoned my flour with pepper and garlic salt. I didn't measure my oil and I also added some butter and I pan fried 1-2 min/side. I sprayed my dish, then put some tomato and basil spaghetti sauce on the bottom of the dish, covered with the chicken, covered with sauce and covered with shredded italian cheese mixture and baked for 15 minutes. Everyone loved it. Kids gobbled it up and husband said to add it to the rotation!

Artichoke Spinach Lasagna

I used chicken broth, a package of baby spinach cut up, quartered artichoke hearts drained and chopped. I did not cook my noodles and it was not overly soggy. Next time I'll add in ricotta to make it more lasagna-like. It was very good. I omitted the rosemary and used basil instead. We enjoyed this.

Jalapeno Popper Spread

I made as written except adding an entire 4oz can of chopped jalapenos versus 2oz. It is very good but quite rich even though I used 1/3 less fat cream cheese. Next time I will use in a larger pie pan versus a smaller round dish b/c the topping was too thick and it needs to be thinner.

Buffalo Chicken Dip

This was good. I don't do canned chicken so I cooked two breasts and chopped it myself. I mixed it with the franks and 1 cup of the cheese and layered this on top of the cream cheese and dressing mixture (I used bleu cheese instead of ranch). Next time I'll use a chunky bleu cheese dressing. I topped with the remaining 1/2 cup cheese. It ended up being a tad oily but was tasty. This makes a ton of dip. I used carrot slices and it worked great.

Salmon Cakes by Melt® Buttery Spread

I've never made salmon patties before because the thought of using canned salmon is a bit gross to me. I was happy to come upon this recipe and it was very tasty; a tad bit too salty so next time I won't add as much as the recipe calls for. I used panko bread crumbs and melted butter.

Cinnamon-Roasted Almonds

I make these with almonds, pecans and walnuts. I like the pecans the best. I followed the reviews and add in 1/2 C brown sugar to the dry mix and add vanilla to the egg whites. This last batch I didn't double the cinnamon but if you want them cinnamon tasting, you should, otherwise they are more like candied nuts (and I prefer this). They are addictive but 4 stars only b/c there are so many changes to make them better.

Overnight Apple Cinnamon French Toast

This was great; although I did make a few changes. I used 1/2 cup butter and also added 1 tsp pumpkin pie spice to the sugar mixture. I spread this on the bottom of an 9x13 dish. I then added thinly sliced apples all over this versus using the pie filling. I mixed the egg mixture as written but added a tsp of pumpkin pie spice to this as well. I used thinly sliced challah bread and dipped it in the egg mixture. I ended up with two layers of this and poured the little bit of egg on top. I sprayed the foil and in the fridge it went overnight. Straight in the oven for 60 minutes covered and then uncovered the last 10. I cooled for 5 minutes and flipped it over as I plated it. It was plenty sweet without the apple pie filling and no maple syrup either (almost too sweet). Everyone gobbled it up. I like that you can literally just throw it in the over straight from the fridge in the morning versus having to sit out like other morning casseroles.

Pepperoni Bread

Everyone loved it. I used frozen bread dough, stretched it to fit my jelly-roll cookie sheet, brushed with egg, added garlic salt, basil and oregano, then pepperoni and a bag of "Italian" shredded cheese from Sargento. Rolled it up, topped with more egg wash and some pepperoni. Baked only about 30 minutes, only 15 of it at 375, backed it down to 325 for the rest as it was getting too browned. Served with spaghetti sauce on the side to dip in. Enjoyed by all!

Overnight French Toast II

Made this this morning. I used brown sugar cinnamon bread added vanilla and cut the milk by 1/2 cup. I let it sit long enough to soak the bread entirely. It turned out fine (not soggy)but was just too sweet(possibly b/c of the bread?) and it wasn't anything special. It wasn't bad, but I'll look for something else to make the next time.

Pumpkin Oatmeal Chocolate Chip Cookies

Just made these, some are still in the oven. I made them exactly as written but instead of mini-chips, I used regular as that was all I had in the house. It's a good, sweet cookie. It's hard to detect the pumpkin in my opinion. If I make them again, I'd add more oats and more pumpkin/spices. My family loved them though, not overly pumpkiny and all...

Artichoke Chicken

This was just ok, nothing special. I didn't use the marinated artichokes so maybe that was my problem. I did use 1/2 mayo and 1/2 sour cream and we could still really taste the mayo. Not one for my recipe box.

BBQ Pork for Sandwiches

Sooo easy and sooo good!! I used a boston butt cut and put it in the crock pot in the morning with chicken stock (all I had), salt and pepper. Left it on low all day, then shredded it, added a bottle of sauce, put it in a 9x13 dish in the over for 30 minutes....was so tasty!

German Apple Pancake

I doubled the recipe but used only 6 eggs (per other reviewers) and added 6 apples as mine were small. I cooked the apples on the stove with the butter, sugar and cinnamon (doubled that), then poured into a big pyrex dish. I didn't wait 30 minutes to pour the batter on top and I added pumpkin pie spice to the batter versus nutmeg. I cooked it per the recipe and sprinkled powdered sugar on top. Everyone loved it!

Banana Frittata

My kids gobbled this up. I made it as written, just added a little vanilla. To keep it from breaking, I slid it over onto a plate and then flipped it using the plate. I'll make it again, very easy.

Apple Pie by Grandma Ople

This was ok. I followed the recipe to a T except for pouring it over, I mixed it with the apples, reserving a bit to paint the top crust with. The flavor was good, but it didn't set and ended up looking more like crumble on my plate versus pie. I'll try a different recipe next time.

Avocado Shrimp Ceviche-Estillo Sarita

Soooo good! I made it as written except I marinaded in the lime juice for a few hours. It cooked just fine (I used raw frozen shrimp that I thawed before adding to the lime). I used more hot sauce per our tastes and just added the avocado into the mix. It's amazing. Served with tortilla chips.
