Cajun Spice Mix

made this last night to rub on some chicken - had to leave out the onion powder because I didn't have any, and instead of measuring I just eyeballed it... but the flavor was very good and my husband was impresssed.

Zippy Chicken Corn Chowder

This was great as is, easy to make and delicious. My only deviation was that I had to make my own chicken broth (with bouillon cubes) so instead of cooking the chicken separately in a skillet, I boiled it with the broth. On my second batch, I cut it down to one leek, added a small diced onion, and 1/2 tsp of cumin for a Mexican flavor. It was fantastic!

Balsamic Chicken

This was easy and turned out delicious. I added julienned onions and yellow bell pepper to the sauce while simmering and served over angel hair pasta. Very good!

Italian Chicken and Chickpeas

I thought this was a very easy and good recipe that I will make again. I liked replacing the pasta with chickpeas - they are filling so you eat less, and also a healthier option than regular pasta. I did not find it at all spicy as some people claimed, in fact, I think I would increase the cayenne pepper next time. I made the sauce exactly as the recipe called, but I used pre-cubed chicken instead, and I cut the amount of chicken in half and replaced it with zucchini and broccoli. Overall, mine turned out great!

Sour Cream Turkey Enchiladas

I made these with left overs after thanksgiving. I tweaked the recipe a tad - first I added cumin powder, chili powder and a touch of brown sugar to the sauce to give it more of a mole flavor. Also, to the turkey/sour cream/cheddar mixture I added more chili powder and some diced black olives for added flavor. The enchiladas were a huge hit!
