I'm a Dietetic student, so I'm always trying to find new healthy recipes that both my husband and I can enjoy!
My favorite things to cook
I am a big pasta lover. I think carbs are a terrific source of energy (making sure the right kinds are eaten). We started making homemade ice cream and frozen yogurt.
My cooking tragedies
Most of my pie baking attempts have not turned out. My mother is an excellent baker, anything from cupcakes to wedding cakes but I just don't have that skill quite yet!

Bran Flax Muffins
These turned out pretty darn good! They got even tastier as they cooled. I thought these would have more of a fruit taste with the apples and raisins but its really just a slight accent to the bran. I squeezed out some of the apple juice when I was done shredding the apples because I thought it might make the batter too wet. Maybe it would have made it more flavorful? I don't know, I'll try it that way next time. These are good muffins. I made a double batch and froze most of them.

Hearty Vegetable Lasagna
Great simple lasagna dish! The only changes we made were to use fresh basil and add it to the ricotta and used an heirlom tomatoe (had to get rid of it) on the top under the cheese. All in all, great dish!

Creamy Buttermilk Dressing
This was ok. I added the lemon juice and just a splash of rice wine vinegar. My dressing was actually pretty thin, which was totally fine. It just did not have much umph. I added quite a bit of dill. Fresh would have been much better but all I had was dry.
