These were phenomenal! I don't like spicy food, but I halved the jalapenos and added some red bell peppers and it was great.

Mom's Zucchini Bread

Yum, yum, yum. I followed recommendations on here and halved the sugar, using half white and half brown, and used applesauce for half of the oil. Even with gluten-free flour this came out AMAZING. My go-to zucchini bread recipe for sure.

Greek Garbanzo Bean Salad

I added pasta and used a Greek dressing recipe from this site (it's a red wine vinegar and lemon juice sauce) and it was outstanding. Make sure you allow enough time for it to chill.

Vegetarian Chickpea Sandwich Filling

I was shocked by how good this was! The texture was great, even if smooshed up chickpeas don't sound too appetizing. Best served on toasted bread open-faced sandwich style.

Chocolate Chip Banana Muffins

These were excellent! The perfect sweetness (I used 1/4 c. brown and 1/4 c. white sugar) and a wonderful texture, even with gluten-free flour. I subbed half the oil for applesauce and used Greek yogurt and added about 2 tbs. dried coconut. My batter seemed quite dense so I added about 2 tbs. of coffee, although I couldn't really taste it in the final product.

Roasted Vegetable Orzo

Tasty but definitely needed some kick. I added parsley and basil to the veggies and grilled some chicken with a little lemon juice and basil. It's a keeper!

I have nothing bad to say about this recipe, except that I ate way too much of it! My potatoes only needed to cook for about 15 minutes, so just keep an eye on them.

The texture of these was almost gag-worthy, but I didn't dry out the beans like people have suggested here. Definitely do that and add extra breadcrumbs.

This was good but not great, at least cooked in a pan (cause it's too cold out to grill). Very citrus-y. I didn't add avocado like others have suggested, though.

Oven Fresh Seasoned Potato Wedges

The temp was too high on these - mine burnt and stuck to the bottom of the tray despite being coated in oil. I'd say 400 or even 375 is a better cooking temp. Delicious though.

The sauce didn't thicken well, but the flavor was excellent. To prevent the chicken from drying out I added the sauce after letting it brown for just a few minutes on each side.

These were good, but definitely up the cook time. I halved the recipe and baked for 35 minutes, but the potatoes were still half raw when I took it out. I would recommend a little more olive oil than suggested, too.

Vanilla Crepes

"You outdid yourself this time!" was the response from my family members when I made this for brunch. I reduced the flour a bit and added more milk, and threw some blueberries sprinkled with sugar with a 1/4 c. water over high heat to form a sauce. Topped with whipped cream, this tastes like dessert, only a little healthier!

Jay's Signature Pizza Crust

My dough was incredibly sticky and hard to work with. I tried to cut the recipe though, so I wonder if allrecipes just messed up the calculations of flour and/or water. Once I managed to get it onto the pan and baked, though, it turned out to be a pretty good basic pizza crust recipe.
