Banana Sour Cream Bread

We love this recipe. I usually do cookies for my father and husband for Christmas to take to work but this year I am WAY to pregnant to mess with all that. So I thought I would do bread instead. I followed the recipe for the most part. I used 3 tsps of vanilla instead of 2 and used pecans instead of walnuts ( I have never had walnuts in banana bread ). I used a mini loaf pan instead of regular sized loaf pans and baked for 18-20 minutes. I re greased the pan and dusted with the sugar and cinnamon mixture for each batch and used about 1/4 of a cup batter for each mini loaf cavity. These came out prefect sized to fit into little treat bags after they cooled completely. They are absolutely delicious: very moist, not to sweet.

These were excellent and fun to make. If you like them really sweet you may want to add some more sugar to the batter. I liked them because they weren't very sweet

Artichoke Spinach Dip

The recipe was great but I thought it had to much of a cream cheese flavor once it was done, I mixed in some home made salsa and it cut down on that flavor and tasted great. Next time I will just cut down on the cream cheese some.

Morning Glory Muffins

I made these a few days ago with a few alterations. I used whole wheat flour instead of white, brown sugar instead of white sugar and instead of coconut and raisins ( I had neither on hand and I am not a big fan of coconut anyway ) I used oatmeal. They turned out great, my 14 month old love them and I do too. It is healthier then most muffin you can buy or make in a package. I highly recommend to moms with little ones that snacks most of the day. My son rarely eats lunch or breakfast these are a healthier substitute for all the junk you could give them.

Chicken Pot Pie IX

This is a very good recipe. I did personalized it a bit though. I used some cilantro and creole seasoning to add some spice. And I added some of the chicken broth to the onion and let it simmered for a bit. My advice to anyone is just personalize recipes. If you like food spice make it spicy. If you think it needs something add it. Be creative, just be careful not to add to much of anything you can always add more but you can never take it away.
