Easy Beef Stroganoff

Followed the directions except I added cream of mushroom soup and 1 1/2 cups of beef broth. Family LOVED it. All of them. That is a rarity in our house. Thanks!

Best Unsteamed Shrimp

Was excellent. I made it in a skillet instead of the microwave. Melted the butter added the OBS and lemon juice. Stirred it for about 30 seconds or so and then added the shrimp until pink. Delish!

Avocado Salad

This was wonderful! I was worried about the amount of onion and lack of "dressing" other than the lime, but it was just fantastic as is. I followed the directions exactly except I used red pepper instead of green. Will make again.

Banana Banana Bread

I made this exactly according to the instructions - except I made muffins rather than a bread. I cooked them for 24 minutes and they are wonderful! Little bit crunch on the outside and moist and yummy on the inside. I may try some of the additions mentioned for the next round, but this is great just the way it is.

Weeknight Lasagne Toss

This was terrific! So much easier than regular lasagna. Both of my kids loved it and cleaned their plates, and that hardly every happens with a new dish. My husband was also impressed with a surprised "yummm!". I used low-cal dressing, added some extra Italian spice, and skipped the peppers as we are not fans of them. I also added cottage cheese rather than ricotta (family recipe). Once the noodles were cooked, I poured it into a casserole dish, added the cheese, and broiled it in the oven to melt. It made it easier to get lots of cheese for each serving.
