Sweet Corn Tomalito

Pretty much exactly the recipe I've seen elsewhere online that purports to be the one from Chevy's - and it does taste exactly like the tomalito you get at Chevy's!

Downeast Maine Pumpkin Bread

Perfect blend of flavors and spices! HOWEVER: Always, always measure your loaf pans. If they are larger than the recipe calls for (as mine are), be sure to use a cake tester to be sure the loaves are completely baked. I made 2 loaves with this recipe rather than 3 (since my pans are a bit larger than called for), and the baking time was about 10-12 minutes longer than the recipe as written.

Baked French Toast

I left out the corn syrup, and the recipe was still delicious. I used thick-sliced "Texas Toast" bread rather than French bread and found that 40 minutes was not enough ... still mushy inside ... probably fine if I'd used the recommended bread.

Deleted mustard the 2nd time I made it, as I didn't care for the flavor. Also ... substitute herbed cream cheese for the mayo and added some chopped mushrooms for more flavor.

Substitute brown sugar for white and add EVOO to the rub so it adheres to the roast better. An outstanding recipe - my new favorite for pork roast!!

I eliminated the chopped tomatoes and tomato sauce, and instead used 2 cups Cento All-in-One Crushed Tomatoes and 3 cups chicken broth. I also use Ditalini instead of spinach pasta, as that is our family's tradition for this dish.
