Squash Stuffed Chicken Breasts

I altered this recipe a lot, but it ended up being delicious, it was a lot trouble to make in a small kitchen, hence the 4 stars. I couldn't cut my acorn squash, so I parboiled it and removed the flesh from the rind. I also layered the bottom of the baking dish with mushrooms and I added ground ginger and fresh rosemary to the flour mixture.

Baked Three Cheese Eggplant

I'd never had eggplant before when I decided to use this recipe. It was great! People who don't like veggies can add more cheesey goodness to the top. Next time, I won't cook the spinach, because I like more green in my food.

Hot Breakfast Couscous

I love this recipe because I can always whip it up from ingredients I've got lying around. But I do change some things, mainly the liquid to cous-cous ratio, which can make this recipe a bit dry. I change it to a half to 1, dry to wet. Thanks for the great recipe!

Italian Sausage with Farfalle and Broccoli Rabe

The only thing I changed was the number of servings and it turned out Absolutely Fantastic! This is the best dish I've made in months. I even emailed it to some of my family!

Orange Corn Muffins

I really liked this recipe, and although I changed a lot, it was still fine. I used plain soymilk (because I ran out of milk), and I didn't add as much orange zest, but I also added grated carrot and zucchini for a moister texture.

Baked Polenta with Fresh Tomatoes and Parmesan

Delicious! Quick to make, but still flavorful. I substituted an Italian cheese blend, because we're not too fond of plain parmesan.
