Alyson's Broccoli Salad

THIS is the recipe! I followed the directions mostly... Using distilled white vinegar, golden raisins, shallot for my red onion and store bought cooked bacon (my deli cooks and packages theirs up). Prep was a snap. I didn't make the sauce separate, but mixed it up with the onion and raisins, added broccoli (next time I'm using 2 heads), stirred again and refrigerated -one bowl. Added the bacon and sunflower seeds just before dinner as directed in step 3. It was really good. HOWEVER, the next day... was the magic! My only regret is that I didn't double the recipe.

Hot Artichoke and Spinach Dip II

YUM! Didn't have Romano so I omitted it and then accidentally left out the mozzarella -- didn't miss either one. **Tip** Defrost frozen spinach in the microwave, wring out the excess liquid over the sink using a clean, thin kitchen towel or cheesecloth. Makes the chopping much easier. I used 1 heaping cup frozen spinach and it reduced to exactly 1/2 cup.

Vanilla Crepes

Simple and delicious. I, too, used whole eggs and it turned out great. We stuffed them with a reduction of blueberries mixed with cream cheese and they were terrific! Next time I'm going to try a savory dish using this recipe. Thanks!

Marinated Flank Steak

Fajita meat was my target. My alterations to the recipe were; using balsamic vinegar in place of the red wine vinegar, using a grainy-type mustard (I used Beaver Deli Mustard) in place of dijon and then low sodium soy sauce. Everything went into a ziploc bag, then into the refrigerator for 8 hours. The flavor of the thinly sliced steak FAR exceeded my expectation. The feedback I got from my family was, "Mmm mm MMMM" and "mmM mMmmm MMmmMM!". I think that means its a keeper, thanks Connie for a fantastic addition to my recipe collection.

Fluffy Pancakes

Thanks for this addition! My kids wanted hotcakes for breakfast and out of pre-mix, it was a delight to find this recipe. I followed the directions as is and think next time I'll try some suggestions from other reviewers (applesauce or canola oil). I also added about an 1/8 c. additional milk to thin the batter just a bit. ***NOTE*** Let the batter stand for about 5 minutes to activate all the ingredients. UPDATE: Since writing this review, I've made these for my kids a few more times.. here's what I've found.. One time I used Canola Oil and didn't care for the taste. Another, I left the batter thicker and added bananas (we really liked that one) and most recently I got to thinking... if this was an "old family favorite", they probably didn't "melt" the shortening, so I cut it into the dry ingredients (after I had sifted them together) and followed the rest of the recipe.

Jimmy's Mexican Pizza

Thanks Jimmy, for an easy recipe, now in rotation. As another reviewer, I attempted to add a middle layer, but I think if I were to do it again, I'd bake them in separate intervals (the middle layer was a too soft) -- hence, for my own preference, I'll stick with the recipe as is written. Although... I did add all the seasonings to the cooking meat for a richer flavor. MMMMmmm...

Award Winning Soft Chocolate Chip Cookies

Wow! My baking skills still need some work, but with this recipe, the work is done for me. They turned out soft and delicious. --The second batch I made, I used butterscotch pudding and 1/2 semi-sweet chocolate and 1/2 butterscotch chips. They were a keeper too! A+

Blue Cheese Dip II

This recipe is a keeper. I made the night before, let the ingredients blend and the next day, it was even better than I had expected. I took it to an xmas party and it was gone before I left. The only adjustment I made was by using dried chives rather than fresh g.onions and a (big) pinch of dried red onion. It turned out fabulous.

Crab and Lobster Stuffed Mushrooms

I made this recipe for a bbq appetizer. They were a BIG hit - the first thing to go! As others suggested, I left out the lobster and doubled the crab. I used fresh imitation crab (from the freezer section) rather than canned, then just shredded it myself, left the croutons a little chunky and it blended very nicely. Also, when they were done, I turned on the broiler just to crisp the tops, 1-2 min. max!

Rosemary Mashed Potatoes and Yams

I thought this recipe could be tweeked somewhat to incorporate the flavors better, but my husband really liked it. I'm not a big rosemary fan, but loved the texture and garlic flavor of this recipe. Also, it tasted more like potatoes than yams so if I made this again I'd reduce the amount of potato and increase the yam portion by about 1/4.

Potato Salmon Patties

My family and I LOVED these patties! I made a few adjustments according to other reviews - fresh celery, an 1/8 c. sharp cheddar, plain bread crumbs with Mrs. Dash and a splash of lemon juice - wow, they tasted sooo yummy. Not fishy at all and flaked while it melted in our mouths. There's nothing overpowering about this recipe, all ingredients blend very nicely together. Thanks, it's a keeper!!!
