Baked Zucchini Chips

So yummy. I used plain bread crumbs and added 1 tsp of Italian seasoning and 1/2 tsp of garlic powder. I baked them on oiled parchment and had no trouble with the crust falling off. After 6 minutes per side at 475* my thin slices were crispy.

Winter Lentil Vegetable Soup

I wanted to love this, but it tasted like a very mild minestrone. Too much tomato for my families taste. I did not precook the lentils and it worked out well with a nice texture.

Connie's Zucchini "Crab" Cakes

My family enjoyed these. I made a few changes based on previouse reviews. I squeezed the zucchini in a dish towel to dry them out, used panko insted of bread crumbs and flour, and doubled the Old Bay seasoning. I served these with Ranch Dressing. Yummy, but didn't taste like crab.

Blueberry-Lemon Crumb Bars

My husband, parents and friends all loved these bars. I thought that they were very sweet and rich. You definatly need to work the dough with your hands. I used 1/2 nutmeg and 1/2 cinnomon for the spice. It is important to let these cool completly before slicing or they crumble (it was hard to wait!). I will make these again for afternoon tea.

Cabbage Patch Soup

This soup was ok, it is a nice base for modifications. It is easy and quick. My only complaint is that the sour cream "broke" and floated to the top in little drops even though I added it off the heat. Next time I am going to use heavy cream instead. Also I will use cubed ham for the bacon.

Zucchini Casserole I

This casserole was wonderful. I made a few changes based on my family's tastes and past reviews. I increased the stuffing to a 7oz bag, used 1/2c. of butter and incresed the sour cream to 3/4c. I also mixed in 3/4 of the stuffing into the zucchini, rather than half, so it wouldn't dry out. Thanks for sharing Jenny C.

Easy Slow Cooker French Dip
