Too Much Chocolate Cake

I'm not a huge chocolate fan so I wouldn't make this very often. It is very rich. If you are a huge chocolate fan then I would think you'd be in chocolate heaven with this cake. I would have liked for it to be just a tad sweeter though.

Orange Cake

I made two of these cakes two different ways based on recommendations. For the one I gave away I substituted yellow cake mix, vanilla pudding and orange extract. I baked it in a 13x9 pan. Unfortunately, I didn't taste this one, but it looked good and worked fine in a flat pan. For the one I kept, I substituted orange cake mix, vanilla pudding and vanilla extract. I baked this one in a bundt pan. It was very moist and every bit was eaten by my family. I wish I could say which was better. For the glaze I mixed 3 cups powdered sugar with 1/2 cup orange juice. This was for two cakes. I warmed the orange juice before mixing so it would flow easily over the cake. When glazing the bundt cake I found that it was better to have a cooled cake. With a warm cake the glaze just slid right off. With the flat cake it didn't matter. I will be making this again.

Burgundy Pork Tenderloin

This will be a repeat recipe. The flavor was very good. As stated by other reviewers, be sure to sear the meat to seal in the juices. I'm sure it would be dry otherwise. I suggest you double all ingredients relating to the gravy because a lot of it evaporates while cooking. I hardly had enough gravy for one person left after cooking. I also used 1/2 wine and 1/2 broth. I don't like a heavy wine taste and this was perfect. This recipe is easy and flavorful so I highly recommend trying it.

Cheese Ravioli with Three Pepper Topping

I absolutely love this recipe. I was so bored with the same old tomato sauce or alfredo sauce. This is exactly what I was looking for. Although it tastes great as is, I will also try it with sauteed garlic next time. If you like your vegetables crisp then I recommend heating the vegetables just long enough to tenderize the garlic because they will continue to cook when the broth is added. I only used 1 cup of broth and that was plenty. I'm not a big fan of really spicy foods but the about of red pepper in this recipe was just right for me. Watch it if you're serving it to kids though.

BBQ Sauce

This tasted like watered down ketchup. I had to keep adding ketchup until I had used almost the entire container of ketchup. Then I had to keep adding worchestershire sauce and garlic. This one is not a keeper.

Fresh Salsa II

I made a lot of changes to this because I was missing ingredients. It came out great anyway. I only used 1 pepper and 1/2 an onion. More than that seems like it would overpower the tomato. Didn't have fresh cilantro so used 1 tsp. dry cilantro. Added 1/2 tsp. salt and 1/2 tsp. pepper. Didn't have jalopeno so omitted. Exchanged lemon juice with lime juice. This tasted very good to me, but for those who followed the exact recipe, it may not be as good.

I only use about 2 tablespoons of mayo and I add some chopped veggies like broccoli, carrots or red peppers to give it some color and taste. I love this one!
