About this Cook
Hi. Thanks for taking the time to read a little about me, though there isn't much too tell! I'm a single mom to a wonderful 14 yr old daughter and 3 fur kids. :)
My favorite things to cook
Anything quick and easy!
My cooking triumphs
I make a great lemon/thyme chicken that is easy to make and gets rave reviews every time. I've started doubling the recipe so that there would be enough leftovers for the next day, as it is that good. It's even good cold! :) I also make a cheesy chicken enchilada that is quite tasty.
My cooking tragedies
UGH! There have been two that I can recall when I was in my 20's. One was a beef stroganoff that I followed the recipe to the letter, but apparently ketchup really shouldn't have been on the list of ingredients! Another was a chicken pot pie that was just horrible!! I can't even tell you what went wrong there! Oh! I remember another one and it think it was the worst by far! My hubby (ex now) and I had tried a wonderful Jack Daniels Saloon Steak for our anniversary one year and we decided to try and make it at home (without a recipe!). What a disaster! We got a wonderful cut of meat and the JD and put it in a bowl with garlic and pepper and let it marinade overnight. Needless to say, it was horrible!! Straight JD and spices just doesn't cut it!! We had to order out for pizza! Lesson learned though. :)

Bum's Lunch
My daughter and I really liked this. I did marinade my steak for a few hours before cooking and added a little of the marinade to the packet - over the potatoes. I also added a bit of minced garlic in there as well. Since I had marinated the steak, I just put a little butter on top of the potatoes. It was very tasty! We will definately have this again! Thanks!!

Cream Cheese Penguins
I made these for Thanksgiving at my sisters and these little guys turned out great! It is a bit time consuming, but worth it as everyone will love them. I did make an "igloo" cheese ball to go with them made out of white cheddar and it was adorable. Thanks for a great recipe!

Easy Bacon and Cheese Quiche
This is a great recipe that you can fix as listed or "tweak" to your liking and personal taste. This is the first quiche I have made and it turned out great! I did change it slightly as I did not have cream, so I used cream cheese as someone else had mentioned. I just added a bit of milk and heated it in the microwave long enough to make it creamy and added it to the eggs along with minced garlic, a pinch of salt and pepper as well as a bit of onion powder as I did not have an onion either. I used cheedar, a bit of mexican blend and fresh shredded parm. I covered the edges of the crust with foil for the first 15 minutes or so (its easier to do when the dish is cold instead of hot!). When I removed the foil I added a bit of grated cheese to the top of the quiche. It turned out wonderful! My daughter loved it and says that now quiche is her favorite food - even over pizza! Thanks for a great recipe.
