The Best Red Enchilada Sauce

Terrific! Doubled it and made 50 chicken enchiladas for a dinner co-op. (5 lbs boneless, skinless chicken thights). I used chicken broth rather than beef, and used about 3/4 c. less than recipe called for because the consistency was lovely; I hated to make it watery. After cooking them, though, would have included all broth so i had more to pour over just before cooking.

Pecan Pie III

Excellent, and a far better outcome than my first pecan pie... anyway to keep the crust from sticking to the bottom of the pie plate, though? Pretty pie slices would have made this a 5 star! ** edited a few days later and upgraded to 5 stars: even with the sticking my 80 year old uncle said it was his best pecan pie EVER... and I have been requested to repeat at Christmas!

Quinoa-Cranberry Salad with Pecans

Great side salad for Thanksgiving; I added 1/2 orange worth of fresh zest and served at room temperature... toasted the pecans with a bit of butter in oven for 10 minutes or so then let cool before chopping...

Terrific -- for thanksgiving I left out the parmesan, but could see adding it back in for a prime rib side. These were a great way to combine two holiday traditionals into one colorful dish...

Great flavor but WAY too much butter -- next time I will halve the butter and not add the eggs... will just monitor for texture and add more broth if needed for moisture (used about 2.5 cups with 2 day old bread left out to dry)

Best Ever Corn Muffins

Pros: super easy and have all the ingredients! For me, the cons were: very dense, and with soup didn't add the "crumble, soak" factor of a traditional cornbread. And, very sweet -- my daughter liked them a lot!

Mexican Rice II

So I always mess up rice and pasta -- even packaged stuff. This came out prepared exactly per the recipe as light, fluffy. Yay! Flavor not withstanding, I will make again -- I like rice with more flavor myself so will adjust accordingly!

Amazing Sun-Dried Tomato Cream Sauce

Delicious! and versatile -- would have been a 5 if the recipe indicated to let it sit a bit before serving -- it was somewhat watery when I served it, but thickened well after the heat was turned off

Island-Style Fried Rice

Whole family loved! -- Cooked the spam really well as the texture is too mushy unless made near-crunchy, and had to eliminate the chinese sausage as the local chinese market was out that day. still wonderful -- the measures for garlic powder? had to wing it and it was great!

Six Can Chicken Tortilla Soup

Really!?! I used a roast chicken v. canned, and a cream of chicken soup uncondensed v. one of the broths. Put home made corn tortilla chips on the bottom of the bowls and then garnished with cheese. Almost too easy; and terrific! I will guiltily make this again and again... good enough for company!

Grilled Hawaiian Chicken and Pineapple Sandwiches

Just got back from spring break in Maui when I made this recipe... had enjoyed a similar sandwich at the 5 Palms in Kihei a few days earlier... and this sandwich was better! The marinade is wonderful, used it on it's own for a chicken main dish

Clark's Quiche

rich and delicious, but the bottom crust didn't get well cooked, and it does have a different texture than a "regular" quiche, and so might be off-putting for the quiche purist.

Winter Fruit Salad with Lemon Poppyseed Dressing

Terrific; great combination of flavors and textures. I generally don't toss my salads with dressing, rather let people dress according to their preference. Everyone at my table enjoyed it. I roasted the cashews with melted butter... yummy!

Spicy Tomato Bisque with Grilled Brie Toast

Me Like! Great combination of flavors -- tripled the recipe for a dinner co-op and, like others, opted for a mix of tomato sauce / diced tomatoes (2 and 1 28 oz. cans). Rye bread was perfect! Brie cheese lovely! Almost too spicy (we like spice in our house), so if that's a concern for others perhaps less crushed red pepper... combined with a light sweet salad -- yummy!

Asparagus with Brie

easy, fancy, delicious. while asparagus is a great stand-alone this offered a dressed-up alternative. keep the main dish simple, though. This dish was rich enough on its own.
