Slow Cooker Cilantro Lime Chicken

Wow! That says it all. Very easy to make and we had 2 great meals with this and still had some leftovers. We made enchiladas one night and tacos another. Outstanding flavor! I followed the recipe exactly with seasonings - BUT I used a whole chicken. It worked perfectly. I just didn't have 3 pounds of chicken breast. In the future I'll make the whole chicken. It was extremely economical!

This was excellent. I made it exactly as stated and my only complaint is that it was all gone! Next time I may double the sauce to make it go a little further so I can have some leftovers!

Tender Pork Spare Ribs

Excellent! I have always struggled with ribs. My husband usually barbeques them and it is hit or miss. I'll be making them this way from now on. I made this as stated as much as I could - used regular paprika and St. Louis style pork ribs because that is what I had. Next time, I would probably add bbq sauce directly on the meat for the last 5 minutes but we're a family who love bbq sauce. So good!

Beef Nacho Casserole

The first time I made this I thought it was good, not great. The 2nd time, we used mayonnaise because we did not have Miracle Whip. It was even better! I know that mayo/Miracle Whip is a personal preference but us - this made it go from 4 stars to 5!

Roasted Garlic Bread

This is good but time consuming. I also think it needs some salt. I salted on my own and it was too much. So, I will play with it again and try less. I think 1/2 teaspoon of salt would make this 5 stars.

Egg in a Hole

I feel a little left out because I never had these growing up and my first experience seeing it was in the movie Moonstruck, but I made them as stated and they were great. I used a small juice glass and that size seemed to work. I used bacon grease, though I haven't cooked with that before and I thought they were great. I'm sure butter would be just fine too.

Magic Peanut Butter Middles

My husband, a peanut butter fanatic, loved them, I thought they were good but a little too peanut buttery. Next time I will add a little more sugar to the middles. They are time consuming to make but fairly simple.

Excellent - my children ate every one and asked for more. Some tasted a little saltier than others but I like salt. If you do not like salt, definitely reduce or omit. Very easy!

Quick and Easy Pizza Crust

I thought this made good pizza dough. I'm a novice at dough so this was less intimidating than other recipes that call for doubling and lengthy wait times. I made exactly as stated and it was a bit sticky but just a bit more flour made it workable for me.

Quick and Easy Green Chile Chicken Enchilada Casserole

The first time, I always make the recipe as stated and this one was just too bland for us and a little dry. Maybe we like spicy flavor more than most. Anyway, the simplicity of the ingredients made me try again with changes. I kept all of the same ingredients and only added 1 1/2 c. of cheddar cheese to the jack and a few Tablespoons of taco seasoning to the chicken. That made the recipe outstanding! So, I rated it 2 stars as stated but I really didn't need to make too many changes for our tastes. Also, the "torching" of the tortillas is a long, tedious process and tearing them up really does have the same effect.

Pesto Pizza

This was a good recipe. I didn't measure things exactly since I was just putting the toppings on and seeing what looked right for our taste so I can't say if the toppings were too plentiful as others reported. I thought it was a good balance just going by sight. For my personal taste, next time I'll use more pesto and maybe add some garlic powder or salt to give it a kick. I did add a little bit of mozzarella after reading about some complaints of melted cheese. It was good too. A very good base recipe to spring from if you desire.
