Creamy Chipotle Chicken

This recipe was great but a bit spicy - and I live in the southwest and like spicy! It was too spicy for my kids but my husband and I loved it. To tone it down a bit next time I guess I would use less peppers or adobe sauce and/or dilute a little with more chicken broth or water. I have cooked with chipotles before and thought they were very mild and have eaten chipotle salsa - also which is mild so maybe I just stumbled upon some hotter ones. Still a good recipe to try again!

Smoked Sausage and Zucchini Saute

Excellent. A little bit salty but very good. The sausage adds a ton of flavor so do not over season. Next time I may use fresh garlic or garlic powder instead of garlic salt and maybe just throw in a pinch of salt afterwards if it needs it.

Soy and Honey Pork Chops

Excellent flavor and a very quick dish to prepare! I already had pork chops thawed out but no plan on how to cook them. I got busy doing other weekend chores and sidetracked. Found this recipe tucked in my recipe box that I had never made. It really did take 30 minutes - a blessing. I made minor adjustments as needed. I cooked in a pan because we have a charcoal grill so that takes awhile to heat up. I also used a regular onion rather than sweet (all I had). It was still delicious. I overcooked my pork chops in the pan but that was my fault. My kids and husband ate every bite and wanted more. Will definitely make again and will make more than stated. P.S. At the start of this dinner, my husband said he didn't feel like having pork chops. By the end, he ate any scrap left.

Fried Corn with Smoked Sausage

Very good, quick and easy. We did not add Accent but followed the recipe exactly. I did think it was a little too salty (and I like salt) so next time will cut down or omit it.

Tropical Grilled Pork Chops

Incredible. A lot of work though - but worth it. Clearly I need to learn how to cut a mango because that was the toughest part. The kids ate every bit. It had a bit too much spice for them but they still ate. It was fine for us though so I might cut the jalapeno to just half for the kids. This recipe is a BIG hit. I will try it again with jarred mango salsa to cut some time and see if it's just as good but the recipe as stated is perfect.

Chipotle Crusted Pork Tenderloin

Good recipe, I need to make it again. I didn't have chipotle seasoning and used chili powder to substitute and cut way back to 1 Tblsp. because so many people said it was too spicy. I thought it lacked spice. My kids are not spice lovers though so next time I'll try 2 Tblsp. and hopefully get the chipotle seasoning. My kids loved this thought and ate quite a bit - which is great!

Fluffy Pancakes

Good pancakes overall and fluffy. One thing to note is it doesn't make a whole lot - at least not for my family. So, I would double the recipe, maybe even triple it. We are a family of 5 and only a few of us had a second pancake - which is fine - but I usually freeze my leftover pancakes for a quick breakfast and I had none. : (

Hearty Ham Casserole

I had to substitute cheddar cheese for processed because we didn't have any. I think the casserole didn't come out as pretty but it sure tasted good. I thought it was okay but my husband and kids came back for seconds and thirds. My 6 year old raved it about the next day too. So 5 stars for sure and a great use of leftover ham from Easter or any other dinner.

Easy Mexican Casserole

I make a lot of Mexican dishes and many casserole types so I was expecting the usual dish but was really surprised. I followed the recipe exactly except used turkey for ground beef (all I had) and I did sprinkle some taco seasoning on the turkey. Everything was delicious and came out very nice - not a big glob of food as frequently happens with casseroles. I like spicy, my husband likes medium, and my kids like mild. We all like this dish as is. I may try with black beans but I think the chili beans gave it a nice kick. I saw other reviewers used Ro-Tel or canned tomatoes instead of fresh and that would be good too I think. You really can't go wrong with this recipe and you can easily adjust spiciness.

Caesar Salad Supreme

Very good - a little spicy though? Not sure why. The anchovies were difficult to deal with - I guess I lack experience with that but next time I'll use the paste as I have in other recipes - much easier and cleaner! I agree with another reviewer who said the dressing was a little too thick. I too thinned it our with cream but it still was thicker than I would have liked - I just didn't want to drown out the taste. Still - excellent flavor! I served it a gathering and had nothing but a few pieces of lettuce left and I had used 2 heads of lettuce!

Honey Glazed Ham

Incredible! I followed the recipe for the most part. Out of necessity, I changed the karo syrup to brown sugar and I only had a 1 3/4 cup honey and used enough cloves for looks rather than measuring. Everything else was the same and the ham was so amazing. My spiral ham was twice the size, 10# but I kept the liquid the same and had plenty. I tented foil over the ham loosely so it wouldn't dry out and doubled the cooking time per package on ham. I also cooked the ham on it's side rather than flat side down which is how I normally do it. Half way through cooking, I flipped the ham and I'm glad I did. The bottom was soggy from juice but an hour of basting it gave it a nice layer of crispness too. Basting is key. Also, I have a gas oven and turned the broiler on high for the last 5 minutes leaving some blackened bits of ham and smokiness in my oven. Next time, I'll broil on low. All in all a tremendous success and the best have I've ever made!

Grands!® Mini Chicken Pot Pies

These were pretty good but a little bland for my taste. Still, it's nothing that some seasonings couldn't fix the next time we make. We went from having no idea what to eat to a meal with ingredients on hand in about 35 minutes. That's a pretty good accomplishment in my opinion! Forgot to mention that we doubled the chicken which I would definitely do again to make it more filling.

Herb Rubbed Sirloin Tip Roast

Absolutely delicious! When it first came out of the oven, I thought it may be a tad salty and spicy but after it had set out a bit and then cut, it was great. Our kids loved it and we had some leftover and were able to make steak tacos which were great too.

Fish Tacos

I try really hard to make a recipe as stated but I just couldn't with this one mostly because I didn't have items on hand and this was a much needed quick recipe for dinner. That being said - it was very good! The key ingredient is the sauce. I must say that I am not a big fan of fish tacos but my husband is. So, here's what you can do in a real pinch - use frozen fish. I was trying to use it up before the date. This was fish in a box so it certainly wasn't fancy. We used lettuce because we didn't have cabbage and again, I will state the key is the sauce. It saved this whole hodge podge dinner. Can't wait to make this again exactly as stated. It could only get better. I will use flour tortillas next time (personal preference).

Chicken Noodle Casserole I

Wow and yummy are 2 words that come to mind. Very easy to make and my whole family kept coming up for more. Next time I will be sure to add some frozen vegetable in there to at least make me feel a little better about it but I didn't have any on hand. I had left over chicken from another dish so this was incredibly easy to make and much tastier than tuna noodle casserole that I remember as a kid.

Slow Cooker Lemon Pepper Chicken

The chicken was very bland and tasted a lot like boiled chicken with some lemon pepper. I guess I just prefer a rotisserie or baked style so that there is a little crispness to it and then moist chicken. At any rate, it was very easy to prepare and I was able to use the leftovers (which I had a lot of) in 2 other yummy dishes. So, all in all, I would make it again just as a way to cook my chicken for other meals that require shredded chicken or small bits of chicken like soup - just not as a main meal.
