Simple BBQ Ribs

Very simple recipe and tasty too. Great way to cook the Country Style Ribs - they are so large and meaty and don't come out as well when using other methods of cooking them.

Grandma's Lemon Meringue Pie

My 1st time making lemon meringue and it worked! I read a lot of reviews and here's what worked for me. I followed the recipe exactly as stated. 2 important things - cook your pie shell first and increase the number of hours this really takes to about 8 hours. I had time for it to cool but not chill and it wasn't quite as great. Luckily, I made 2 pies and the next day served the other chilled one - incredible! Also, definitely double the recipe for the filling. It was great, can't imagine how little there would be if I hadn't doubled it. I kept meringue portion the same and it was enough for me but not a gigantic portion. I didn't know how to do meringue so here's what I learned. Whisk the eggs until foamy also means - until it doubles or triples in size so go beyond just the foamy part.

No Bake Peanut Butter Pie

I made this recipe last year and it was little runny. I tried it again with a few changes (it was going to a picnic and wouldn't be eaten for an hour or so) and it was incredible. First, I followed someone's advice and made a nutter butter crust - divine! To make 2 crusts, use a whole package and 6-7 Tblsp of butter. I baked it for 7 minutes at 375. Next, I omitted the milk. I ran a bit short for filling 2 pies but next time I would just add another 1/2 of the other ingredients. I received a lot of compliments. I think the pie is fine (with the milk) if serving right away out of freezer - I just need it to hold up better.

Ranch Dressing II

Very Good - a little thick for my taste so I added some milk to make it the consistency I wanted. I also added more salt to our liking which brought it up to maybe 1/4 teaspoon or just a little under.

Best Ever Blueberry Cobbler

Too sweet for my tastes and I like sweets. I think the topping was the culprit. It's still a good recipe and I will just adjust the sugar to my taste.

Blueberry Pie

Great pie. I made it as written except I squeezed a bit of lemon into the fruit and used 3 cups of blueberries and 1 cup of blackberries because I ran out of blueberries. I also used 4 Tblsp on cornstarch. It was still waaayyy too runny. Next time, I'll try 5. I also baked according to another reviewer's advice, 400 for 15 minutes, 375 for 35. Pie had just the right amount of sweet and tartness.

Apricot Glazed Pork Roast

The preserves and other ingredients made a coating (glaze) that was excellent. This version was what the crockpot does - meat with a lot of liquid around it. Everything tasted okay but it didn't really have that "glaze" I was hoping for. I will try again and follow the suggestions on the bottom for a thicker liquid or try sahm2nick suggestions - cooking meat first and adding onion soup mix - which is what my oven recipe called for as well.

Very Best Blueberry Cobbler!

I made the recipe exactly as stated and felt like it was too sweet - and I like sweet. The recipe says to sprinkle the one cup of sugar or less over the blueberries but it's hard to know what to do the first time. Now I know to start with 3/4 of a cup and see how that goes. It definitely was easy to make and great - just a bit too sweet.

Slow Cooker Baby Back Ribs

Wow - very good and a lot easier than grilling ribs. I have made ribs every which way - including broiling them first before putting them in a crockpot. That comes out great but is a little harder to do when you're rushing off to work. I like how the BBQ sauce gets cooked on at the end. Next time, I will try what one other review did, after cooking it for a bit, add another layer and cook another 10 minutes or so for added crust look and flavor. Great simple recipe!

Broccoli Cheese Soup

Flavor is good but it definitely is too thin for my tastes. I stuck to the recipe except for when I had to deviate. I used fresh broccoli (what I had) and used 2 stalks chopped which equaled 4 cups. Next time, I would add more. I also only used 1/3 cup of corn starch because that was all I had. I tried to make up for this by not diluting in water. So some of the thinness is due to that. I will cut down on the chicken broth next time to see if that helps and maybe do half processed and half cheddar combination. Still, good flavor and now I can adjust to my tastes.

Creamy Hot Cocoa

Excellent! I've never made hot cocoa from scratch and it was incredibly easy and delicious. It was a tad too sweet for my tastes - and I love sweet stuff so next time I'll cut back a little bit. I'm never buying powdered stuff again!

Butterscotch Oatmeal

Excellent. I made this as stated but had to use 2 different types of oatmeal because I ran out. That made the texture a little odd but it's not the recipe's fault. I kept the sugar at 1/2 c. because my kids are used to the sweet sugary packets of oatmeal. This was way better and everyone loved it. My husband would have liked it less sweet but that is an easy fix. I have never made homemade oatmeal but I will now!

Balsamic Roasted Pork Loin

I cannot believe how good this was! I am not a big fan of pork loin so I was beyond impressed with this recipe. I made this with Prime Rib for a holiday dinner. I actually cooked it, refrigerated it, and then reheated in the oven when I needed to serve. It wasn't dried out at all. I didn't baste the pork loin but instead just turned it over ever 20 minutes and then spooned the juice over the cut up slices of loin. It was extremely messy to clean up but I didn't care - it tasted that good!

Ultimate Twice Baked Potatoes

Incredible - a lot of work but worth it. I haven't tried freezing yet but that would make it even better since it's a long process. I agree with another reviewer that they are a little soupy so I should have eased up on milk. I did follow another's advice and squished them a little bit to make them fluffy. I don't really know if that made a difference but I did it. I subbed cream cheese for half of sour cream and that was tasty - I usually add both to my mashed potatoes. I tripled the recipe since I had a lot of guests coming. If you do double or triple, don't cut all of the potatoes and then scoop...the potatoes started cooling too much which made scooping more difficult. Cutting 4 at a time would have been better.

Creamy Chipotle Chicken

This recipe was great but a bit spicy - and I live in the southwest and like spicy! It was too spicy for my kids but my husband and I loved it. To tone it down a bit next time I guess I would use less peppers or adobe sauce and/or dilute a little with more chicken broth or water. I have cooked with chipotles before and thought they were very mild and have eaten chipotle salsa - also which is mild so maybe I just stumbled upon some hotter ones. Still a good recipe to try again!

Smoked Sausage and Zucchini Saute

Excellent. A little bit salty but very good. The sausage adds a ton of flavor so do not over season. Next time I may use fresh garlic or garlic powder instead of garlic salt and maybe just throw in a pinch of salt afterwards if it needs it.

Soy and Honey Pork Chops

Excellent flavor and a very quick dish to prepare! I already had pork chops thawed out but no plan on how to cook them. I got busy doing other weekend chores and sidetracked. Found this recipe tucked in my recipe box that I had never made. It really did take 30 minutes - a blessing. I made minor adjustments as needed. I cooked in a pan because we have a charcoal grill so that takes awhile to heat up. I also used a regular onion rather than sweet (all I had). It was still delicious. I overcooked my pork chops in the pan but that was my fault. My kids and husband ate every bite and wanted more. Will definitely make again and will make more than stated. P.S. At the start of this dinner, my husband said he didn't feel like having pork chops. By the end, he ate any scrap left.
