Outrageous Chocolate Chip Cookies

I followed the recipe exactly. These are great cookies. Great taste, texture, easy to make. Definitely adding this recipe to my annual Christmas baking rotation!

Chicken Marsala

Great recipe for chicken marsala. We both hate mushrooms, so I prepared the recipe without them. I used thin-sliced chicken breasts, as well as a combination of 1/2 cup dry Marsala wine and 1/4 cup chicken broth. I removed the chicken from the pan after browning, then added 2-3 T of leftover dredging flour to the butter-oil in the pan, cooked for a minute or 2, then added the marsala and boiled to thicken slightly before returning the chicken to the pan. Gave a nice body to the finished sauce! Garnished with freshly chopped Italian parsley before serving.

Ricotta Gnocchi

This recipe was the first time I ever made gnocchi from scratch. I couldn't believe how easy these gnocchi are to make. The dough came together easily. The cooked gnocchi had a great texture. The 2 of us ate the whole batch! The sauce was really good, too. I definitely will make these again.

Pumpkin Turkey Chili

This came out great! It is easy to tailor the recipe to suit your personal preferences. For example, I added a can of black beans, drained, and a couple handfuls of frozen corn. Definitely needs some chicken broth for desired consistency. I forgot to buy diced tomatoes, so I used an equivalent amount of salsa (drained). Added cumin and extra chili powder. At the end of cooking, squeezed in some fresh lime juice, and next time I will add some chopped cilantro for color and flavor. Even my BF, who doesn't care for traditional beef-kidney bean chili, loved this turkey version. He was eating it right from the pot after I made it.

Garlic Chicken

This was so easy to make and so good to eat. The chicken came out moist and crispy. Great flavor. Instead of heating the oil and garlic together, I marinated the garlic, and fresh rosemary sprigs from my garden, in the olive oil. Let that infusion sit overnight to blend flavors. I also used half panko and half roasted-garlic potato flakes. Served the chicken with roasted fingerling sweet potatoes and broccoli. Delicious!

Mom's Italian Beef Barley Soup

This is a great basic soup recipe that you can alter to suit your tastes. For example, I used beef broth instead of bouillon and water. I added garlic, carrots, celery, and a can of petite diced tomatoes (drained), as well as a splash of red wine. I also browned the meat (after dredging in flour, S&P) and veggies first before placing in the crock pot. Then deglazed the pan with some of the broth and added that to the crock pot. Tossed in some fresh rosemary from my garden. These extra steps resulted in a hearty soup with lots of Italian flavor!

Chicken Makhani (Indian Butter Chicken)

This dish comes together easily once all the prep work is done (your mise en place). I served the butter chicken over brown rice, garnished with a sprinkle of chopped cilantro and cashews. My BF praised it as "fantastic"! Definitely will make again.

Grilled Jalapeno Poppers

I scaled recipe to 6 servings to make appetizers for the 2 of us. I added a dash of chili powder and cumin to the cheese mixture. Instead of grilling the poppers, I baked them at 375 degrees for about 20 minutes. I wrapped about half of them in bacon -- they are good with or without. Overall, these were easy to make and delicious!

Garlic Roasted Chicken and Potatoes

A tasty and easy way to prepare roasted chicken and veggies. A versatile recipe that you can tweak to your taste. For example, I used sweet potatoes instead of yukon gold potatoes; added chopped carrots and sweet onion; and seasoned with fresh thyme and rosemary from my garden. The sweet potatoes were a great compliment to the maple syrum, and the house smelled great while this was baking.

Black Bean Hummus

This is a great black bean hummus. Very flavorful and easy to whip up in the food processor. I thinkg this also would make a good filling for quesadillas (cooked with pepper jack or cheddar) or as the base for a tex-mex layer dip (with sour cream, guacamole, chopped tomatoes, lettuce, cheese, etc.)

Indian Fish Curry

We really enjoyed this for dinner last night. It was very flavorful, right amount of spice (I used 1 tsp. cayenne), and the fish was very moist. I used fresh-caught black tile fish, served with brown rice and steamed carrots. All of the different flavors came together very well. Instead of canned vegetable stock, I made my own using leftover shrimp shells, a few celery tops, and the stems of the fresh cilantro. I also added some curry powder to the spice mix.

Italian Dressing Mix

Great combination of flavors in this mix. I usually sprinkle the mix directly on my salad, then toss it all otgether with EVOO and vinegar. Adds a nice flavor to the salad greens.

Beefy Baked Ziti

I made a half-recipe of this baked ziti for the 2 of us, and it was delicious. I couldn't stop eating it right from the pan after it came out of the oven. I substituted fresh mozzarella (leftover from another recipe), thinly sliced, for the shredded mozzarella and layered the sliced mozzarella with the sour cream instead of the sliced provolone. Instead, I put the sliced provolone on top with the Parmesan.

Clams Italiano

This is a fantastic recipe! I usually serve this dish over linguine, but most recently, I cooked the clams and sauce in a large foil pan on the grill and served it with crusty Italian bread as an appetizer. Received many compliments. And you can freeze the leftover sauce for another meal -- just add some fresh clams.

Actually Delicious Turkey Burgers

Great recipe for turkey burgers. Made a batch for a beach BBQ and was complimented on how flavorful and moist these were. We topped them with American cheese and served them on whole-wheat buns with all the fixins.

Grill Master Chicken Wings

These were excellent and easy to prepare. Instead of chicken wings, I used chicken drumsticks to feed a crowd. Got many compliments on the sauce -- I used Frank's hot sauce as recommended with a few dashes of Trader Joe's jalapeno pepper hot sauce. You will not be disappointed if you make this recipe.

Absolutely Fabulous Greek/House Dressing

I liked this dressing a lot -- and thought my Greek salad of romaine, plum tomatoes, cucumber, red onion, and feta was delicious -- but my boyfriend found the dressing too sharp. I definitely will make this again, but I probably will use less vinegar next time.
