Slow Cooker Chicken Tetrazzini

Delicious! My picky 7 year old even loved it. I used boneless/skinless thighs because its what I had on hand. The meat was so tender & wonderful that I think I will use them again next time. I also set the slow cooker to low instead of high. I added fresh mushrooms to the onion, soup & cream cheese mixture on the stovetop. One thing to note is that I think the thighs make a little more juice, so I poured off just a little of this after it cooked for a few hours & before I added the stovetop ingredients. About 15 min before everything was done, I also added frozen green peas. Mmmmmm! You will love it!

Incredibly Cheesy Turkey Meatloaf

To make this just a little tastier, In addition to using Italian Breadcrumbs, I also use Jennie-o Italian Season ground turkey. - If you want to make it really, really outstanding however, use one package of the Jennie-O Italian turkey, and one package of Kobe burgers from Trader Joes.... Sure it adds to calories, but its not exactly low fat with all that cheese anyway. ;)

Scallops Mascarpone

I made this for my husbands birthday. I'd never made scallops before, but the recipe was super easy, and he LOVED it!. If you have a Trader Joes in your area, I highly recommend using their Fresh cut & ready Diced Onions, Garlic & Shallots instead of just garlic. I also used the larger Sea Scallops, not bay scallops. I'm sure it would have been delish either way. This recipe will definitely get be used again at our house.

EAGLE BRAND® Chocolate Fondue

This was SO easy & delicious! Made chocolate fondue for my daughters 6th birthday. I used a Cuisinart electric, non-stick fondue set , so I only had to clean one pan & it was really easy. I followed the recipe *almost* exactly, except we used a full 12oz bag of milk chocolate chips instead of semi sweet. Also followed another recommendation I read: I cut up a pineapple as one of the things to dip, but one cut, I let it sit in a strainer for 30 minutes to get rid of the extra juice. Other items we dipped were, pretzels, potato chips, twix bars, and of course apples & strawberries. This was so easy & kids & adults both liked it. Will do it again for sure!

Candied Sweet Potatoes

These were fantastic! I did however make a few minor changes that I believe made them even better: I used less butter and brown sugar, but added a couple of tablespoons of apricot jam. Can you say yum?! Also, after the marshmallows were melted into the butter, brown sugar & jam, I added a small splash of fresh orange juice. I used bagged sweet potatoes from Trader Joes that were already peeled and cut into chunks--they seemed a little overdone, so next time I will boil for about half that time. All in all, this is one for the ages. I will be pulling this out every year for Thanksgiving.
