Ono Butter Mochi

Reviewed: Jan. 24, 2012
This came out weird. I used glutinous rice flour (as stated in the recipe - 1st ingredient) - I couldn't find mochiko flour itself and thought they were the same thing? It came out rubbery and slightly sticky. Is that normal? I had a choice of rice flour or glutenous rice flour at the store and now I wonder if I made the wrong choice? I'm totally confused at this point and since I've never had mochi, I have no idea if this worked well or not. As for flavor, it's okay but not super flavorful.

Moroccan-Style Stuffed Acorn Squash

Reviewed: Oct. 5, 2011
As a new vegetarian, I'm always hunting for new hardy recipes. This is a really wonderful dish! I followed the directions exactly (except used veggie broth) and it came out great. I don't usually like sweet dinners but this was surprisingly good and I will make it again. My only concern was that it came out a little dry for my taste. Next time I will add some diced apples and maybe a little more of the butter/sugar mixture in the squash. Even if you don't like 'sweet' dinner food, don't be afraid to try this. The cumin and raisins add a great dimension to the dish and combined with the natural sweetness of the acorn squash, it just works. Thank you for this recipe!

Korean Egg Roll Triangles

Reviewed: Feb. 29, 2012
Really really good! I loved these. I made a smaller batch and just eyed the amount of ingredients vs following the amounts written in the recipe. Also I didn't have any noodles so I substituted some sticky rice instead and they were delicious. Much better than my regular Chinese egg role recipe. I dipped them in Thai sweet chili sauce - so tasty. Thank you for sharing!

Fruit Dip II

Reviewed: Dec. 12, 2011
I served this at a party and everyone had the same opinion: It was delicious but overwhelmingly sweet after about 2 bites. If you happen to like dipping beautiful fruit into cheesecake (because it tastes exactly like it) then you may enjoy this. I prefer a lighter flavor/ texture paired with the natural sweetness of fresh fruit. I wanted a fruit dip, not a sweet dessert. Disappointing considering the reviews.

Jo-Ann's Power Bars

Reviewed: Nov. 9, 2011
Excellent! I replaced half the wheat flour with rice protein (extra nutrition) and used pecans, sesame seeds, cranberries and raisins (everything else exact). They are wonderful and my 3 teenagers like them as well. One hint, they taste not so good out of the oven but when you chill them over night in the fridge....SO good!! I can't wait to try some variations. This is a keeper and I will keep on hand for quick breakfasts on the go. Thank you!!

Best-Ever Texas Caviar

Reviewed: Oct. 17, 2011
I gave this 3 stars because I changed up the recipe to my own tastes. I made the sauce but after tasting it, the sauce is just way too sweet! Who wants sweet and sour Mexican food? I prefer spicy, salty, lime flavor myself. I didn't use canned beans (used dried and precooked myself), used fresh corn, roasted my own green chili's on the grill, added fresh diced avocado, white onions, fresh garlic and cilantro. I used a drizzle of olive oil, lots of fresh lime juice and some juice from a can of jalapenos I had on hand. I completely skipped the sweet bell peppers, sweet red onion, sweet vinegar, and sugar. Made my way, it was fantastic! Served it over barley I had precooked and then sauteed with garlic, CA chili and cumin. It made the best taco's ever! Thanks for the recipe. As a relatively new vegetarian I've been struggling to find things I can make with flavors I love that don't include meat. This recipe sparked my creativity and although I didn't care for it as written, it was a starting point for something I will make again and again. Thanks!

Creamy Macaroni and Cheese

Reviewed: Oct. 17, 2011
I was looking for a homemade mac-n-cheese recipe like my grandma used to make. I found this recipe to have the consistency of school paste. I followed the directions but between the sharp cheddar, strong Parmesan and the mustard, it was SO sour! I have no problems cooking a rue so I know that wasn't the problem with the consistency but for some reason it was too thick and way way too sour. Neither my 3 teens nor my husband and I could even eat it. Disappointed it was such a waste of good ingredients (and money).

Squash and Coconut Milk Stew

Reviewed: Mar. 3, 2012
Different but quiet tasty. I made as directed but I had to substitute sweet potatoes for the acorn squash because that's what I had on hand and I left out the shrimp as I don't eat meat. I had never had anything like this so I wasn't sure what to expect. It tasted nice but when you put it over sticky rice...much better. It has a very mild flavor, only slightly sweet and is very creamy and soft tasting. I enjoyed it and will make again. Thanks for sharing!

Stuffed Bell Peppers

Reviewed: Dec. 11, 2011
Good vegetarian main dish. I used brown rice instead of white and good jarred spaghetti sauce instead of the tomato sauce and added fresh garlic in with the onions but used everything else as listed. The dish was really good. The next day I sliced the left over pepper and put in a french roll. Tasted just like a meatball sub lol. Thanks!

Polish Chicken and Dumplings

Reviewed: Jul. 8, 2011
This was amazing!! I omitted the allspice, basil, season salt and cream of chicken soup though. I did use everything else and added a couple cubes of Knorr bouillon to the chicken while cooking. For the dumplings (per another reviewer) I used 2 cups reserved broth instead of the water but otherwise I followed exactly the flour and seasoning. Omg it is so delicious! The dumplings are tender and a little chewy (perfection), the chicken and soup was very flavorful and it thickened up nicely. My family LOVED this dish! My husband who normally doesn't eat alot of chicken (and hates dumplings) had several bowls lol and my three teenagers had multiply servings as well. Who can ask for more? :D This is definitely something I will make again and again. Thank you so much for sharing!

Focaccia Bread

Reviewed: Jun. 20, 2012
I like the herb combo in this so 3 stars. The first time I followed exactly and it came out flat with a very, dense, cake like texture but still tasty. Second time I proofed my yeast with warm water first, then added the herbs and other ingredients. Let rise to double, punched down and after putting in final baking pan I tried to let it rise again (with no success I might add). I topped it with fresh Parmesan cheese only and a little extra sea salt (personal preference). It was good but the bread was still too flat and dense even the second time around. I'll keep the herb combo and look for another bread recipe. ;-)

California Grilled Veggie Sandwich

Reviewed: Jun. 20, 2012
Best sandwich ever!!! Such a simple recipe but packed with flavor. I was out of gas for the grill so I broiled the veggies and I made homemade Focaccia Bread (recipe found here). The combination of veggies, feta (awesome choice), special mayo and 'still warm from the oven' fresh bread was amazing!! A recipe I will make again and again. Thank you so much for sharing Heather!

Sweet and Sour Sauce I

Reviewed: Mar. 31, 2012
Absolutely delicious! I am in love with this sauce. In fact, I make a small batch to serve over sticky rice (with tons of veggies on top) several times a week for dinner. Yum yum! I do double the ketchup because it tastes more like the sweet and sour I'm used to eating but everything else is good. I still want to try pineapple juice instead of water but so far, I'm enjoying it as is. Thank you very much for this simple and delightful recipe.

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: Jan. 17, 2012
The BEST pie ever! I never in a million years would have thought this would be good but it was fantastic. The whole family loved it. I was really puzzled by the fact there was no coconut flavoring in this though. I gave four stars because of the changes I made. I omitted the spices (which have nothing to do with coconut cream pie) and added half a can of coconut milk to the eggs and sugar. I did use the vanilla but cut the sugar in half. It taste exactly like coconut custard! SO GOOD! Thank you so much for this recipe!

Israeli Moroccan Couscous

Reviewed: Dec. 29, 2011
I think it's just a matter of personal taste but this was not good. I couldn't take the cinnamon flavor, it ruined the dish for us and the combination of spices and veggies just didn't work out liked I'd hoped it would. Also, I don't know if the veggies were supposed to be mushy (which they were) but we like a firmer texture and I had cubed them. We're vegetarians and I'm always on the hunt for new recipes but I will not be making this again as I'm the only one who could eat a bowl. Btw it makes a huge amount! Not sure what to do with all of it now. :-(

Easy Broccoli Quiche

Reviewed: Dec. 12, 2011
Wonderful and easy. I've made this several times and it's consistently good though I've made several changes. I prefer to use heavy cream instead of the milk for a richer flavor. I also use half Monterrey Jack/half Pepper Jack instead of the mozzarella and I add a couple tbls flour to the egg mix to make a thin batter. Great starter recipe though. Thank you!

Sesame Noodles

Reviewed: Dec. 12, 2011
So GOOD! I loved this dish. Made it for dinner tonight but I used spaghetti noodles. I also cut the chili sauce in half and it was the perfect amount of heat. Per other reviews I added a small amount of chopped cilantro as well as some fresh grated ginger and it was a nice addition to the flavors. Don't skip the sesame oil! It really adds so much to the flavor of the dish. My teens and hubby said it was very good but I loooved it. :-) Next time I will try fresh noodles (Asian). Definite keeper. Thank you!

Roast Pumpkin and Feta Risotto

Reviewed: Dec. 11, 2011
Delicious vegetarian dish! Had a pumpkin I didn't know what to do with and this was perfect. Followed the directions exactly (although I did add 1/2 tsp of curry at the end). I will make this again and I want try it with a baking squash (when pumpkins are out of season). Thanks!
