I feel it is important to state that I am new to eating healthy. The reason I want to mention that first is because I've been coming across a lot of healthy recipes that are given good ratings and when I try it, Im gagging. Ive chalked this up to the fact that the people who enjoy it must be used to eating a cardboard diet, lol. I am a wife and mother of three, transitioning my family to a healthier eating lifestyle so this recipe is the first we have tried for waffles being as though we are primarily Eggo people. Now that you understand my palate, let me say this: THESE WERE DELICIOUS!!!!!! If only everything with flax meal and wheat germ tasted this good. I did make a few changes because of what I had on hand: I used sweetened apple sauce, almond milk instead of regular, spelt flour instead of the whole wheat and all purpose (just subbed it cup for cup) and cane sugar rather than white. Mmmmmmmmm...my 6 year old is standing here asking if his is ready yet, so I gotta run!
