Chocolate Chip Cookies (Gluten Free)

I am a GF, DF and egg free wife and mother of three. No one else in this house shares my allergy!!! I've made these cookies many times and I cant tell you enough how good they are. We follow the recipe exactly and use the Bob's Red Mill All-purpose flour replacer or a homemade blend that uses garbonzo or fava bean flours as the main. No one knows, no the neighbors or the kids and they are astounded when you tell them!

Delicious Ham and Potato Soup

Ive made this soup many times but not since we have gone dairy free and gluten free, so I made the soup exactly as written, but substituted margarine for the butter, corn starch for the flour and soy for the milk. Deeeelicious! You'd never know!

Whole Grain Waffles

I feel it is important to state that I am new to eating healthy. The reason I want to mention that first is because I've been coming across a lot of healthy recipes that are given good ratings and when I try it, Im gagging. Ive chalked this up to the fact that the people who enjoy it must be used to eating a cardboard diet, lol. I am a wife and mother of three, transitioning my family to a healthier eating lifestyle so this recipe is the first we have tried for waffles being as though we are primarily Eggo people. Now that you understand my palate, let me say this: THESE WERE DELICIOUS!!!!!! If only everything with flax meal and wheat germ tasted this good. I did make a few changes because of what I had on hand: I used sweetened apple sauce, almond milk instead of regular, spelt flour instead of the whole wheat and all purpose (just subbed it cup for cup) and cane sugar rather than white. 6 year old is standing here asking if his is ready yet, so I gotta run!

Thai Coconut Chicken

Loved this but made some modifications to suit my taste. Sauteed my chicken in sesame oil and a clove of minced garlic then I added the carrot, 1/2 cup asparagus (its all I had), green onion and about 1 cup of chopped cauliflower. Cooked that and then added the coconut milk, some fish sauce, cashews, salt and a ton of red pepper flakes for heat. Mmm, good.
