I recently moved to Denver with my always-hungry boyfriend and I love having guests over for dinner! I love stuffing stuff! Stuffed chicken! Stuffed tomatoes! Stuffed squash! I could go on and on. One of my "specialties" is twice baked potatoes. I've made a hundred varieties over the years and I am still discovering different combos. My family is South American, so we grew up eating a lot of black beans, a lot of rice and corn. Oh, and a lot of pork. I love revamping my mama's favorite's and making them healthier. Making a crowd-pleasing vegetarian dinner for a group of friends, the including meat-eaters. Oh goodness, I have burned things. Many things. I actually set garlic bread on fire once. I am now very afraid of the broiler.
