Antipasto Platter

Fabulous party platter, there is something for everyone. I have made this many times and vary it each time. Stopped adding the lettuce leaves, the salamis and other items are colorful enough. As others have said, this is pricey but always a hit at a pary. I also make sure to have good foccacia and other breads along with tasty mustards for those who want to make a mini sandwich.

Penne with Spicy Vodka Tomato Cream Sauce

I made a couple minor changes - i halved the amount of garlic and substituted with two minced shallots. I also used fresh basil instead of parsley. I used a very light turkey Italian sausage that I got at Whole Foods. Yummy!

Potato Latkes I

Very good recipe after incorporating the advice from other reviewers. I only added one egg and tripled the flour and amount of onions. I cooked these in olive oil instead of peanut oil. This was my first time making latkes and they came out perfect with the above changes!

These were very good. I followed the recipe exactly with no problems. They are very pretty and festive looking for holiday platters. I went the simple route with plain old Smuckers Strawberry jam.

Cranberry Orange Cookies

Yum! The mixture seemed overly moist so I added an extra half cup of flour. Keep a close eye on the cooking time, you may need to shorten it depending on your oven and they can burn fast (I found 11 minutes to be optimal). I would definitely reccomend using FRESH cranberries if possible, they are more tart than dried and such a wonderful complement to the sugar frosting. The cookies were so good on their own I was tempted not to add the frosting but I'm glad I did. Put the glaze in a plastic sandwich bag & cut off a very small corner to swirl the glaze on - it looks really pretty (the first time I just spread the frosting on and the cookies looked kind of boring).

Snickerdoodles I

I have been looking for a good Snickerdoodle recipe and I found it. The first time I made them with all butter because I didn't have any shortening in the house - the next time I used butter flavored shortening and it makes a difference in the consistency and chewiness (I think this is the only time I've preferred a recipe without butter!). Very easy to make just watch your oven not to overbake. All in all a great recipe that makes a huge batch of cookies! Yum!

Jamie's Cranberry Spinach Salad

LOVE this! I've tried various substitions (pine nuts vs almonds, using different dressings for a short cut) but the original recipe is my favorite. The dressing is one of the best I've ever made - the sesame seeds and poppy seeds add so much flavor. Definitely toast the almonds in the butter, it adds a very special touch. The only variation is I always use a nice extra virgin olive oil (NOT vegetable oil as the recipe says). Last night I also added goat cheese for the first time and I loved it and will include that moving forward. Every party/dinner I serve it at every last drop is gone (and everyone asks for the recipe).

Neapolitan Cookies I

YUM! This is a family favorite. For the first time this Christmas I made them with a green colored dough in place of the chocolate - very festive for holiday cookie platters. Used strawberry extract with the red dough and put the almond extract in the green - delicious.

Pesto Pasta with Chicken

An easy delicious favorite - great for simple dinner parties, buffets or a casual dinner in. I usually make with homemade pesto and add a handful of toasted pinenuts and loads of grated parmesan. Also, cook the chicken in a bit of the pesto and the oil from the sundried tomatoes. The first time I forgot the peppers and really missed them - they add an extra punch to this recipe.

Awesome and Easy Creamy Corn Casserole

I follow the recipe exactly and have perfect results everytime - although I often double it for big family gatherings. This is a request for every holiday dinner - yum! Everyone asks for the recipe and is shocked when I tell them how easy it is and what it is made of.

Green Punch

Perfect for a halloween party! I served it in a plastic black "cauldron" from the local party supply shop and floated black plastic spiders in the punch. Definitely no need to add the extra sugar, it tasted great and was plenty sweet without it. The kids loved and so did grownups.
