Beef Mushroom Barley Soup

Great soup/stew! I used leftover cooked roast and dehydrated mushrooms. I followed a reviewer's recommendation and added 1T. Worcestershire sauce. The kids even thought it was tasty. I will definitely be making this again!

Balsamic Brown Rice Salad

I served this as a warm salad and the whole family enjoyed it. I sauted the onions, celery, and crasins in a bit of olive oil and a sprinkle of seasoning salt. I had 3 cups of leftover brown rice that I added to the skillet. I used a few tablespoons of pomegranate balsamic vinegar which is very sweet omitting the need for the splenda or balsamic dressing. I will continue to use this as a way to use brown rice leftovers.

Dark Guinness® Brownies

These were good and rich and gooey brownies. We had just the right amount of leftover Rogue Double Chocolate Stout for this recipe. We could taste the beer, but the flavor was nice.

Sweet Potato Patties

These were a great addition to Christmas dinner! I didn't add the coconut and we didn't miss it. I oven baked the potatoes prior to grating them to avoid the uncooked flavor/texture that another review mentioned. We will be making these again soon.

Oh So Refreshing Rhubarb Punch

This punch was very refreshing! I added less sugar and included the lemon lime soda and a bit of leftover club soda. Most people enjoyed the punch and could not tell that it had a rhubarb base. Something different to do with a huge crop of rhubarb, thanks!

Chinese-Style Baby Bok Choy with Mushroom Sauce

I cut the baby bok choy into thirds, steaming the bottom third and stir frying the top portion. I used low sodium soy sauce which helped a bit to keep the dish from being too salty. I added 3 sliced chicken breasts, which, with the addition of rice, made it a great meal.

Southwest Steak Bites

These were great! We have a bunch of cube steak and this is one of the best recipes we have come across so far. With half the steak chunks, I marinated in the teriyaki sauce recipe (by Judy)from this site for 2 hours. With the other half I used a combination of Stubb's Bar-B-Q Spice Rub and McCormick Grill Mates Applewood Rub. Both versions were tasty and enjoyed by adults and kids.

Zucchini Yogurt Multigrain Muffins

I added maple granola instead of oat flour and honey flavored yogurt instead of the honey. Having no zucchini on hand, I used part of a bag of salad spinach that I had in the freezer that I crumbled. The spinach gave the muffins more color but did not add any distinct spinach flavor. My 4 and 2 year old loved these. I thought they were nice as a snack or meal accompaniment. They were definitely dense and hearty.

Fruit Muffins

A nice versatile fruit muffin recipe. I made mine with grated pear and a bit of almond extract and some cinnamon. The flavor was quite good and the kids liked them too.

Coffee Marinated Steak

I followed suggestions and added about half the soy sauce and marinated steaks for 30 hours. I used two end cut rib steaks that had been overly dry-aged on the hanging beef. The marinade brought them back to life. The flavor is good, and you can't easily discern the ingredients. Went well with Sugar Snap Peas recipe from this site.

Creamy Mashed Potatoes

Spicy Eggplant

We loved this, even my husband who does not do a lot of spice. I left out the onions and upped the quantities of everything else slightly to make more sauce. I served it as a side with BBQed steak. Great Flavor!

Cherry Balsamic Short Ribs

Did not have fennel or celery, used freshly ground dried herbs, used strawberry soda. The ribs still turned out great. I would agree with jrbaker- the carrots and cherries were a nice flavorful side to the meat. We served it over quinoa.

Chicken Breasts Supreme

I had some chicken breasts that had spent too much time in the freezer and were looking a bit dry so instead of pan frying them for this recipe, I poached them in chicken broth and wine. The poaching made them moist and juicy. Then I followed the reminder of the recipe. It was a good chicken and gravy comfort food.

Filet Mignon with Garlic Shrimp Cream Sauce

Very Tasty! The only change I made was seasoning the beef and letting it sit at room temperature an hour before cooking. My husband was a bit concerned that he had forgotten some sort of special occasion (he hadn't) because it is that type of meal. The one and three year old loved it. I wish that I had steamed cauliflower to serve with it. It would have been delicious in the sauce.

Asian Steak Stir-Fry Salad

Had a bag of spinach and this was a great way to use it. I added water chestnuts, canned mushrooms, and celery and a tablespoon of oyster sauce. It was something that even the kids enjoyed.

Meatloaf With A Bite

To deal with some of the excess liquid, I put the salsa in a strainer while getting together the remaining ingredients. That seemed to help make a more firm meatloaf. It was a nice bit of variety that everyone enjoyed. Great with cornbread and mexican sour cream rice (from this site).

Banana Bread

Used part butter part applesauce in place of shortening. Had extra bananas and a smidgen of leftover cherry yogurt that I added and compensated by adding extra flour until the batter was the right consistency. Great banana flavor! I liked this no egg version.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Good base recipe! Followed recommendations and used white wine to thin the sauce. Added Penzeys Brady Street Cheese Sprinkle seasoning along with the other herbs which made it a make again recipe for us. Served over homemade spinach linguine- Very Tasty- can't wait to try it with chicken and mushrooms
