Pumpkin Coconut Milk Soup

Great Soup! Subs I made were earth balance butter (instead of regular), only one bouillon cube (cut back on salt) and juice of whole lemon instead of orange juice. Came out pretty good!

Eggnog Quick Bread

Pretty good! I substituted a few things. Used half a cup of sugar, 1/4 oil 1/4 butter (in place of 1/2 cup melted butter), used Silk Soy Milk Eggnog, and whole wheat flour, and it still came out yum! :D

Pumpkin Roll I

Comes out tasty, but I disagree that it is "easy" to make, unless you have all the proper gear. Mine kept falling apart when I went to roll it, I didn't have a "jelly roll pan" but used a cookie sheet and I didn't have the tea towel but tried with aluminum foil. I wish the recipe had more detail. That being said I thought it was a bit of work to make, and presentation didn't come out as nice looking for me, but I made up for that by cutting it into pieces.

Crescent Layer Bars

Wow this came out great! Although I will admit I was sceptical up until the last step of chopping them up into bars. Initially they look like pizzas. Also, my condensed milk dripped off the sides and that stuff will carmelize/burn all over your pan. If I were to try again I would maybe try to add the condensed milk between the layers. But despite all this they came out really good. I left mine in the fridge for two to three hours to solidify.

Braised Balsamic Chicken

this smelled good! This was also my first time cooking chicken and it went well! And if you LOVE balsamic vinegrette, you will be in heaven with this dish. In my case however the cook time was much longer, I cooked (in addition to 10 minute saute) the chicken about 20 minutes. But I didn't use a skillet, I used a stainless steel general pan, so that might have been why I needed longer cook times.

Baked Kale Chips

Wow! I loved these! Thanks for the receipe Lucy! It is always great to find a HEALTHY snack you can make. To save myself chopping, I bought pre-washed and pre-chopped (use half the bag, probably a little more expensive than bushes of kale, but less work for you). I did a 1/4 teaspoon of low sodium soy sauce and 1/4 teaspoon garlic powder, and came out great in 12 minutes! Some of my kale could have been a little more crispy, so i may try 14 minutes next time.

Eggplant with Garlic Sauce

Very good! Expect a lot of spice with this dish! I cut the sugar down a bit (3 teaspoons), oil (2 tablespoons). Maybe that's why mine was a really spicy. But it was still very good to eat (but spicy!) and I was glad to cut the sugar/fat down a tiny bit. I also meated up the dish with two large tomatoes and a red onion.

Whole Wheat Zucchini Bread

Mine came out a litte dry at 55 minutes. Also, for me the cinnamon was really overpowering. But a good thick bread for dipping in tomato soup.

Cranberry Eggnog Cornbread Scones

These exceeded my expectations. I made a few adjustments and they came out really good. Replaced butter with applesauce Used whole wheat flour Used Soymilk eggnog, a little bit more than 2/3 cup until all flour was no longer dry. They were nice and fluffy and soft.

Southwestern Barley Salad

I think the base is very good. However, the lemon juice was for me very overpowering. To tame that taste I added a squashed in avocado as well squeezed in juice from a whole lime. Then it really hit the spot for me.
