This was great! I did not have coriander, but it still came out great. I did make some changes though after talking to the falafel guy in my neighborhood and looking at another recipe online. I soaked an entire bag of chick peas overnight. I measured about a can's worth of beans using an empty can and cooked them for 1 hour before I mashed them. I didn't have coriander, so I did not use it. Also - I used italian seasoned bread crumbs because that is what I had. I eyeballed the (dried)parsley since I did not have fresh. I made balls instead of patties and baked them and had about 14. I know of a place that sells them really cheap downtown, and usually get one when I'm in that area, but it's nice to know how to make it yourself.
