Ginger Veggie Stir-Fry
Versatile, use any veggies you have on hand. Very good flavor & crunch, under-cook since keeps cooking as it sits. I cut the oil down to 2 T, used chicken broth for the other 2 T. Next time I'll try NO oil & 1/4 c. chicken broth to make a fat free dish. Also, did not add the salt. Used this as a side dish with chicken. Very Yummy :)

Easy Peanut Butter Bars
A one bowl recipe, very fast and easy to make & SO TASTY. So this recipe replaces my other peanut butter bar recipe and is now is my "Go-To" recipe for these bars. HELPFUL HINTS: When the recipe says to "fold chocolate chips into the batter" = STIR them in with a stiff spoon. And, to "pour batter into prepared dish" = SPREAD the dough in the pan because the "batter" is more like cookie dough, not like cake batter. And, I actually baked them for only 15 minutes. Soft & Yummy! Thank you :)

Italian Cream Cake I
BEST Italian Cream Cake Recipe - tried other recipes but this on is THE Best (has less oil & more buttermilk, creamier, not as oily). FOR CHRISTMAS-- This is a versatile recipe - great like it is with the nuts and coconut. However, the 2nd time I made it, I added to the batter (instead of pecans & coconut): 1/2 cup chopped maraschino cherries, 1/2 cup chopped toasted almonds, 1/2 cup mini chocolate chips (Combine in a small bowl with a little flour to help distribute evenly & add to batter after folding in the stiff egg whites). Sprinkle more on top of cake for garnish. This tastes like Cannolis with the cream cheese frosting. I also added 1 tsp. almond flavor to the batter. Superb!
