This was awesome. I made a few changes, as others had suggested. I used brown sugar in the topping and a little butter in the topping. I also used 2 apples and half white flour and half whole wheat flower. Everyone loved it.

Irish Soda Bread

Absolutely wonderful!! I used Splenda, light sour cream and reduced fat buttermilk. I made mine in my Kitchenaid mixer and didn't knead it, just used a low setting. It was perfect. This will now be the only Irish Soda bread recipe I use.

Mom's Coleslaw

Excellent recipe. I used splenda and Kraft fat free mayo as we are trying to lose weight. It was great. My grandma always added celery seed (not celery salt)to her cole slaw so added some to this one and it tasted just like hers. It's a keeper. I also made the pulled pork recipe from this website (the one with the root beer) and served them together for a real old fashioned southern BBQ. Even though I'm in upstate NY.

Cowboy Caviar

This is an awesome recipe. I bring it everywhere and always get asked for the recipe. I don't like tomatoes so I use roasted red peppers in their place. I also use fat free Italian dressing and serve it with baked scoops. This makes it a very healthy snack to bring, without anyone thinking they're eating healthy. I sometimes mix this recipe with lettuce and reduced fat cheese for an awesome southwestern salad. That gets rave reviews also. There are many variations on this recipe, but I like this one the best. Always go for the fresh cilantro as it makes it taste so fresh!

Chai Tea Mix

Absolutely wonderful! I skip the cardamom (personal preference) and add the allspice and nutmeg. Having this on hand is a priority in my house. My daughter loves this and makes this tea every night. We have both given it as a gift, packaged in small tins with a pretty mug or cup along with the recipe, as this is always requested. LOVE IT!!!

Three Berry Pie

Wonderful! I used a mixture of fresh and frozen berrys. It was great! Can't wait to get more fresh berry and make this again. My husband said that this was the BEST pie her ever had. i used a mixture of sugar and SPLENDA to cut out some of the calories.

Baked French Fries II

I've been making fries like this for years. I use a little seasoned salt and Emeril's Essence. My family loves them. It's such a healthy and easy alternative to frozen fries....NO TRANS FAT in these fries.
