Hearty Split Pea Soup

Doubled the recipe and made this with all the ingredients as listed except the bay leaf, but cooked on the stovetop for about an hour. It was the best split pea soup I ever made.

Oh my, was this delicious. Like another reviewer, I served this to my meat-and-potato-loving husband and teen son, who raved about how wonderful it was. I had to substitute thighs for the breasts, and I was worried about being out of cumin. But it still turned out great.

French Apple Tart (Tarte de Pommes a la Normande)

Made this as one of many for a Thanksgiving crowd, and it was the hands-down favorite. We had to use a different pastry because we had to have it gluten-free, but we made everything else as close to the recipe as possible. We didn't have the tablespoon of apple brandy so we substituted a teaspoon of regular brandy plus two teaspoons of almond extract. The almond filling and apricot jelly glaze really "made" this!
