About this Cook
Married mother of two young children. I love surfing this site for just about anything new I can try.
My favorite things to cook
I LOVE to bake!!
My favorite family cooking traditions
My mother passed away when I was 17, so I didn't get to the chance to get all of her knowledge. I like to try and make things the way she did though, when it comes to holiday meals. Like at Easter and Thanksgiving, she always made a lime/cream cheese/pineapple jello mold that is awesome!!
My cooking triumphs
Honestly, almost everything I bake turns out good.
My cooking tragedies
Not very much, usually when I don't find a good enough recipe, but I keep trying.

Asian Pork Tenderloin
This was amazing!! My family loved this! I didn't have green onions so I used chpd red onions. Also, I used chili pepper flakes instead of the paste. Grilled the tenderloin from Costco on low (high on the non meat side of the BBQ) turning every 10 mins for about 45 mins or so. This worked on chicken but much better on the pork!!

Chocolate Chocolate Chip Nut Muffins
Tried to follow the recipe as close as possible, as this is my first time making these ones. I did use half WW flour and half AP, also added in 1/2 cup bran. I only have skim milk in the house, so I did 1/3 cup half and half cream and added a cup with the skim (used a little extra for the bran). Put all my liquids into my four cup glass and made a well into the dry, mixing them that way. Also, did the 3/4 cup of cocoa instead of the chocolate. Made 12 huge muffins in a regular pan that was filled to the top. So far daughter likes them, so its a winner!! Hubby and son will eat just about anything I make but she's the real judge.....lol

White Chocolate Blondies
These turned out amazing! For white chocolate, I don't understand the adding of reg chocolate, so I didn't. Used white chips as others suggested, and a couple good handfuls of Craisins and chopped walnut pieces. Family loved them, especially the ones who don't like cranberries!! They freeze very well and making another batch right now, as I need more for this half of the holidays. Think I will try adding almonds and toffee pieces next time. I did double the recipe for a 9x13 pan. The cooking time is almost about 50 mins, cause the batter was very thick.
