Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

My kids and friends loved these. I don't like cookie dough, so I thought a smaller amount of dough in the cake would be better. Plus, it seemed there was enough cookie dough to roll more than 24 cookie dough balls, so I did. They were smaller, and I learned...Do NOT do that!! Take what dough you have and roll them into generous sized cookie dough balls. The dough in the middle is awesome, not gooey, just makes the cupcake super-moist. DO be sure to completely freeze them. I also used a chocolate cake mix - yum! and whipped up caramel frosting to pipe on top. (Recipe is on this site - 'Caramel Frosting V'.) The combination of flavors was rich and made it easy to stop eating at just one cupcake.

Blueberry-Lemon Crumb Bars

The crumb topping is a very good crumble to use over fruit in coffee cakes. My family wasn't crazy about the bars though, because the crust was a little denser than what we like. It was a crispier, denser crust, versus a lighter cake-like crust that we would have preferred.

Baked Lemon Chicken with Mushroom Sauce

Fan-tas-tic! Rubbed chicken with olive oil, then salt-peppered-herbed each breast, then poured a generous amount of lemon juice around them and baked at 400 for about 25 minutes. Then I changed the oven to 450 and allowed the breasts to crispen and brown a bit. (Maybe 10 minutes.) Sauteed mushrooms in a little olive oil and a couple of splahes of water to bring out the juices. After adding the flour, I added a few tbsp. of lemon juice along with the stock to bring out more lemon flavor in the dish. The gravy was great. Served with asparagus on the side. Yum, and kids liked it too.

Baked Ziti I

I'm from St. Louis, where provel cheese is king, and replacing the provolone for provel will produce a gooier and more melty-cheese texture and flavor. The sour cream could be upped if you like your pasta more creamy. I personally like my pasta with plenty of sauce, so I added more red sauce, otherwise it seemed a bit dry. Overall, a great pasta that has a super-tasting white-red flavor.

Oatmeal Peanut Butter Bars

Great healthy alternative to a chocolate chip cookie. Like other reviewers, I changed the corn syrup to honey and omitted the brown sugar altogether. To lower the fat, I mashed half of a small banana and used it to replace half of the butter. The banana could not even be tasted. (I used 2 tbsp. of butter and the remainder was the banana.) I probably could have used all banana and no butter and it would have been just as good. Add or substract raisins/choc. chips/ coconut, etc. as you prefer. I added flax meal too. Chewy, sweet, oaty dessert.

Black Bean and Salsa Soup

I did as others suggested and only pureed part of the beans. I thought the soup had a little too strong of a salsa taste so I added an extra can of beans so that my mixture was 3 cans pureed and 1 can of beans in bean-form. Also added enough chicken broth to get the soup to soup-consistency rather than pintos-and-cheese consistency. I added brown rice at the end and that created a more complete protein for my vegetarian child. My kids liked it a lot. Anyone could tweak it any number of ways, but it is a great, simple base to work with. Thanks for the recipe.

Whole Wheat Snickerdoodles I

Awesome! Crispy, crunchy. These cookies have a wheaty and airy texture to them that gives them a sense of being lighter in calories even though are a cookie. My family loves them. They have become a favorite.

Crispy Frozen Treats

A family favorite!!! If you like the 'fried ice cream' served at Mexican restaurants, you'll like this. No, you'll love it and won't be able to stop eating it!! I increased the amount of rice cereal/brown sugar/etc. topping, because that is my family's favorite part. I also added cinnamon to that mix and it was even better. Finally, we have tried it with homemade caramel sauce on top, honey drizzled over top, and even chocolate fudge sauce. All great ways to make the dessert even more decadent.
