Chicken Enchiladas with Creamy Green Chile Sauce

Great recipe. Only made some small changes to use what I had on hand. I used pulled pork instead of chicken, flour tortillas instead of corn, and a can of Rotel tomatoes instead of green chiles. I used an immersion blender prior to adding the sour cream and the sauce was incredible!

Pumpkin Apple Butter

Don't underestimate the splattering, I was constintly cleaning up my floor, stove and the microwave above. Great consistency and way less sugar than other apple butter recipes. The pumpkin flavor was subtle.

Mom's Best Peanut Brittle

I love this recipe and have made 5 batches in the last couple of weeks. I do add 1 tsp vanilla when adding the baking soda and butter as well as warm up the pan in the oven so I just have to tilt it around to spread the candy instead of stretching with forks.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

Wonderful recipe. I used frozen baby brussel sprouts and even my two year old liked them! My husband likes really sweet carrots so next time I may add more brown sugar. Enjoy!

Banana-White Chocolate Pancakes

What an awesome treat! I made these for dinner with my 2 yr old son (he mashed the bananas :)). We'll definitely make them again - maybe for a birthday breakfast. I used half the amount of cinnamon because I was afraid it might over-power the other flavors.

Oatmeal Chocolate Coconut Chewy

AWESOME cookies. My husband, who likes crispy cookies, and I, who like 'gooey' cookies, both loved these. Great even without nuts. The coconut added great texture without an over-powering flavor.

I won't make these again - they had were very bland. My cookies didn't spread at all, so if I was to make them, I'd not make them quite so round.

This was okay when looking for something different to make. I guess I used smaller biscuits, so it was much harder to roll it out enough to fill the muffin tin. As suggested I used less BBQ sauce and just seasoned the beef well with garlic and onion powder, worchestershire sauce, ect. It paired well with mashed potatoes.
