Honey Crunch Pecan Pie

Reviewed: Dec. 21, 2012
Made this for Thanksgiving in lieu of a traditional pecan pie and I loved it. The honey perfectly complemented the pie and I enjoyed the extra crunch on top. My family also were happy with this dessert.

Mozzarella-Stuffed Pesto Turkey Meatballs

Reviewed: Dec. 26, 2011
I made two batches of these: one with turkey and one with beef. Let me say WOW! The cheese is perfect inside this meatball and it is flavored so wonderfully. I did use store bought minced garlic to cut down on time and sprinkled a little garlic salt on top before putting in the oven. I also used less tomato sauce than in the recipe because my husband isn't a fan of lots of sauce but THEY WERE SOOOO GOOD. It made so many that we froze half so expect a lot of leftovers unless you are making for a large party.

Downeast Maine Pumpkin Bread

Reviewed: Dec. 26, 2011
Yumm. My mom has had this recipe for years and it is ALWAYS DELICIOUS! My favorite thing to do is make some cream cheese frosting and take a slice and slather it with the frosting.

Funnel Cakes IV

Reviewed: Sep. 11, 2011
YUMMM! Top this with a little powdered sugar and boysenberry topping and you will be in heaven. You do need to add a little vanilla extract for posterity though, as other reviewers have commented. I made these the other night for a family party and they LOVED them.

Four Cheese Macaroni

Reviewed: Mar. 29, 2011
If you are a cheese lover, then this is the recipe for you! I used the suggested changes by other reviewers (nix the eggs, more cheese, less baking time) and it was so delicious! I also didn't get two kinds of cheddar and instead used mozzarella, which was very yummy. My family ranted and raved about this and I will definitely be using it again.

Streusel Coffee Cake

Reviewed: Mar. 22, 2011
I made this as a special treat for my fiance, as we are forever looking for different breakfast-type recipes to try. I enjoyed this but added a little dark and light brown sugar to the middle and top streusel to give it a little more texture and taste. Next time I will put a little of the topping in the batter, as well as putting the mixture in the bundt pan before adding batter and also in the middle and top as the recipe suggests. I only had one cup of sour cream so next time I will add the full two cups and see if that makes my cake a little more moist. Otherwise a great treat for anytime of day!!

Too Much Chocolate Cake

Reviewed: Mar. 22, 2011
This cake is so rich and delicious! Not for those who don't have a passion for triple chocolate cakes. I used Thin Mint Girl Scout cookies on the bottom of a cupcake and made a Thin Mint-style buttercream to top it. Together they made a tasty version of the cookie that washed down well with a glass of milk. I will definitely be adding this to my recipe repetoire because it pleases all who eat it!! (BTW - If you use it for cupcakes like I did, be warned that it makes approximately three dozen regular cupcakes, so plan on having a lot. I baked mine for 20-25 minutes at 350 degrees and they turned out great!)

Easy Honey Mustard Mozzarella Chicken

Reviewed: Mar. 13, 2011
I had all the ingredients in the house so I figured why don't I try out something new for dinner. I used a little dijon in my honey-mustard mixture and topped my chicken with A LOT of bacon because that's what my family likes. I also added a little three-cheese on top of the mozzarella right before I pulled the dish out of the oven which was very yummy. I was very pleased with the outcome of this and will definitely make it again.

Fluffy Pancakes

Reviewed: Mar. 7, 2011
I cut the recipe in half because I only wanted to make enough for two people. Big mistake! I ended up making another four servings (8 pancakes) after that first half batch because they were so good. This will definitely be my go-to pancake recipe.

Caramel Shortbread Squares

Reviewed: Mar. 6, 2011
This was so decadent and delicious. I'm not sure the caramel portion of the square turned out right but it was good just the same. I doubled the recipe as suggested by past reviewers and used a 9x13 pan, but I'm ended up with a lot of shortbread bottom and little layers of chocolate and caramel. Next time I might tweak the measurements on the shortbread so I don't end up with such a large amount. Sticking the shortbread in the freezer/fridge was definitely helpful but make sure you stick it back in the fridge after adding the caramel and leave it in there for a sufficient amount of time for the caramel to REALLY firm up before adding the warm chocolate. End product is yummy!!!

This pancake recipe was very good. I would have liked it to taste more corn-cakey but otherwise a delicious alternative. I definitely want to try it with other muffin mixes.

Deep Fried Oreos®

Reviewed: Feb. 19, 2011
Yum! If you like fried food and Oreos, then you will find this a treat. I can't say that I used exact measurements because I didn't have measuring cups handy so I just made it until I thought it was the right consistency. But if you read the recipe, some thought it was too runny, but mine turned out puffy and delicious. Add more pancake mix to thicken it out and you should be fine.

Easy Cream Cheese Danish

Reviewed: Feb. 19, 2011
These were very yummy. I read the reviews before and I used the suggestions from others about the measurements for the filling. I also used two 8 oz. packages of the dough because my grocery store didn't have 10 oz. Turned out delicious though.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Feb. 13, 2011
Can you say YUM?! These are by far the cupcakes from Heaven. Cookie dough in the middle makes this treat so decadent and delicious. I only froze my dough for 30 minutes and it turned out wonderful so if you are on a time crunch you don't need to wait the two hours. Just make sure the dough is stiff so it doesn't overcook in the oven.
