Best Beef Dip Ever

Reviewed: Oct. 21, 2010
Huge hit at my house! Great flavor. Changed it up because of previous reviews and instead of just water, used Campbell's French Onion Soup and Beef Consomme. Mixed all the juices and the garlic (besides the water) together in a container the night before so that everything could "settle". And since I'm not huge on rosemary (although my husband is), I used half the amount of rosemary, and used oregano too. Also added onion at the last few hours. Put a little mayo on the french bread, and then some shredded cheddar cheese on top of the meat. Went into the broiler for just a minute and it was amazing!

Broccoli Cheese Soup V

Reviewed: Jan. 26, 2011
I LOVED this recipe! With a few tweaks, as always.. I used fresh broccoli, and let it simmer about a half hour. I added about a tsp of minced garlic to the onion mixture, and instead of using all broth, I used 1 can of cream of broccoli. And used about 1/4 velveeta and 3/4 cheddar. And took out about 3/4 of the milk.. I wanted it to be thicker. I thought this was better than the ones I get at bakeries and restaurants!!

San Francisco Sourdough Bread

Reviewed: Jan. 19, 2011
Finally, a fluffy sour dough bread that is crisp on the outside!! I think my starter needs to get a little more established, but this is the fluffiest bread I've ever made. Through all the research I've done and the little practice I've had, I've learned that making the full amount of the recipe makes a huge difference. Trying to cut it in half did not work as well. The yeast needs to dissolve in warm water, but since this recipe doesn't include water, I just put it in a 1/4 cup of the warmed (100-110 degree) milk and added the rest after letting it dissolve for about ten minutes. And by spraying the oven with a spray bottle a few times while cooking and/or leaving a shallow pan with hot water on it, the steam helps the outside become crispy. I did use butter instead of egg on the outside, and omitted the onions on top. Very good!! And happy to finally not have one issue with the outcome of my bread!!

Sourdough Starter

Reviewed: Jan. 19, 2011
Awesome, thanks. It was easy and it worked out great. I just turn on my oven to 400 degrees for a minute or two and shut off just to get the air warm and let it sit in there (just make sure your spot isn't too hot - like more than 95 or so - I killed a starter by doing that!) And watch out, it quadruples in size!!

Make-Ahead Mashed Potatoes

Reviewed: Jan. 19, 2011
Sooo good! Added a little minced garlic and garlic salt, and it was really good! Maybe next time I'd use a little less milk though to make it just a little thicker.

Perfect Berry Shortcakes

Reviewed: Jan. 6, 2011
This is the way my mom always made shortcake, very simple but good - and not too sweet. I didn't have the kind of butter that could be frozen so I took a chance and just used regular butter, I don't know if that made a huge difference.. Also didn't bake them they way it said, just made them like cookies and had big balls of it, the same way you'd make cookies but bigger. Used fresh berries with a little sprinkle of sugar. Delicious :)

World's Best Lasagna

Reviewed: Feb. 20, 2011
Awesome! Followed other reviews by only using 1 tsp salt and one tablespoon of sugar.. I omitted the water and used extra sauce, and probably used a little more cheese.. My italian in-laws loved it! :)

Cherry Cheesecake

Reviewed: Dec. 27, 2010
This was exactly what I was looking for when I wanted to make cheesecake for a family get together. and I'm pretty picky with my cheesecake. It wasn't overpoweringly sweet, but it definitely wasn't bland by any means! The only thing I'd say is that next time I would soften my cream cheese a little more because there were some little chunks, so the texture was off a tiny bit, but it was still good! I made them into 6 little mini cheesecakes, so everyone enjoyed their own little cheesecake :)

California Grilled Veggie Sandwich

Reviewed: Apr. 24, 2012
This was an awesome recipe! My only negative thing to say is that it was very messy, at least for me and my family. Maybe instead of open faced, I would try some kind of roll where the veggies will have at least one side that they wont fall out of!

Felix K.'s 'Don't even try to say these aren't the best you've ever eaten, because they are' Chocolate Chip Cookies

Reviewed: Dec. 20, 2010
This recipe was exactly what I was looking for! Nestle's recipe for chocolate chip cookies were too "cakey". I was looking for something crunchy on the outside and still soft on the inside, and this is it! I added cocoa to make them chocolate (about 1/2 cup because I cut the recipe in half). These were very good so I can't wait to try them without the cocoa too.

Chicken Taquitos

Reviewed: Oct. 25, 2010
Very good!! We don't have a deep fryer so we used a skillet, but they still came out very crispy. And we used mozzarella because we didn't have swiss, which I think worked more to our taste anyways. We couldn't stop! Definitely had to microwave the tortillas in the wet paper towel, they're very finicky! Will do again but maybe add something else to it, like maybe chopped chili's or something to give it a kick.

Chicken Pot Pie IX

Reviewed: Jan. 6, 2011
I'm not a huge pot pie fan, and neither is my husband. But it was a cold, rainy day and it sounded like something good and "homey" to make. I've never made it before, so I was kind of nervous. I followed my instinct and some of the other reviews!! I brushed egg whites on the pie bottom and cooked at 350 for about 7 minutes. I cooked the chicken with potatoes, celery, corn, and carrots in broth. I shredded the chicken instead of cutting cubes. I used garlic salt and garlic powder instead of celery seed. I used 2 cups of broth, and mixed the two together before poring in pie. I'm not sure if I'm the only one but I had double the amount that I should have! The only thing I used more of is the broth because even with the veggies, I used the same measurements just different veggies.. But it's ok because it was reallllllllly good! And I'll probably just add maybe more broth and milk to the left over stuffing and make some kind of soup or something with it. We loved it!!

Creamy Chicken and Wild Rice Soup

Reviewed: Dec. 29, 2010
My husband kept saying how much he loved this all night! Lots of flavor, really good :) I really didn't measure anything at all, just went by texture! So I'm sure it wasn't exactly the same. I didn't have rice with seasoning packets, I only had the Knorr's rice packets (I used Garlic & Butter), the seasoning already mixed in with the rice. So it cooked in the pot with the chicken and broth, which I think might have enhanced the flavor! I sauteed onions, and for the last few minutes I threw in minced garlic, and garlic salt. Very very good!!

Amish Meatloaf

Reviewed: Jan. 6, 2011
It could have been how I made it, I put it in the crock pot for lack of timing later in the evening. I checked on it and kept sucking out any fat every hour or so. Cooked on high for about 5 hours, and then added the topping and cooked on low for about 45 minutes. It was good but really mushy, and maybe a little too much ketchup? I'd try it again with maybe 1 egg and less ketchup.

Chicken Wellington Casserole

Reviewed: Nov. 3, 2010
Comfort food :) I cooked my chicken and then shredded it, mixed with everything else. I split the crescent sheet into four sections, and stuffed the crescent rolls with the filling and pinched them closed (so I had four large rolls stuffed with the filling - yum!). I had to cook them a little longer, but it was worth it. Maybe next time, I'll add some chicken broth to make it a little juicier. Maybe it dried up more than usual because I cooked it for longer or the juices could have cooked a little into the rolls. Maybe a little shredded cheese in the mix would even be good - but then again we're just cheese fans!

Easy Mint Chocolate Chip Ice Cream

Reviewed: Oct. 27, 2010
Mint Chip Ice Cream is one of my favorite ice creams.. so I had high hopes for this one! I had to scale down the recipe because our ice cream maker only fits 1.5 quarts, so i don't know if I messed something up in the process? But although it tastes ok, it's not like the baskin robbins type of mint chip I'd hoped for. I did use whole milk only because I had some I wanted to use up and plus I feel like 2% makes ice cream kind of "icy" instead of creamy, and the texture was amazing! But even though I still took off about 1/4 of the amount of pepper mint, it still tasted like maybe it was off. Maybe it's the brand. Would like to use shaved chocolate but I don't know how to do that! So I just threw my chocolate chunks in the processor, and broke down the larger pieces in there even more. I'll try it again, and try to perfect it! But other than the mint, it was still delicious.

Delicious Chicken Casserole

Reviewed: Jan. 19, 2011
I thought this had very good flavoring, but I gave it 4 stars because I made some changes. Also, I might have done something wrong but it was very runny. But I used boneless skinless chicken, used chicken broth instead of using the homemade one, garlic salt instead of celery salt (because I don't have any) and added a tiny bit of minced garlic. Would try it again, just watch the amount of liquids before adding it all in again.

Ultimate Twice Baked Potatoes

Reviewed: Jan. 19, 2011
I had a problem with the potato skin becoming loose but the centers weren't cooked, so I just had to cook them all the way and then mash it up, mix all the rest of the ingredients, and bake. I probably just had weird potatoes.. it was still good though!

Chicken Tetrazzini I

Reviewed: Dec. 20, 2010
This recipe was pretty good! I used bowtie pasta instead - just a personal preference. I think the only reason it didn't get 5 stars from me was because something about the consistency with the sauce. But I'll try it again, and see if any tweaks help with that. Otherwise it was totally worth it!

Three Cheese Baked Ziti

Reviewed: Dec. 29, 2010
Thought this had great flavor, but definitely needed a little more sauce. (I didn't use Ragu though, we use Classico) So I just warmed up some sauce and poured it on my plate. Once that was done, it was really good!
