Italian Taco Salad

This is a quick and easy taco salad. Add your favorite salsa and you have a great meal! I used one cup mixed taco cheese and one cup cheddar along with the mozzarella. Adds more of a taco flavor. My husband and I loved this one.

Insanely Easy Vegetarian Chili

WOW! This is so quick and easy! My husband loved it. I used 2T of chili powder and it was just right for us. You can add or substitute your vegetables/beans. I added a can of mixed beans with jalapenos and it gave it a bit more zip. Serve with warm french bread and a side salad and what a great dinner in 30 minutes! It's even better the next day. Will definately make this over and over again. C. Ferris

Old Fashioned Scalloped Tomatoes

This is an excellent tomato side dish. We aren't vegetarians, but anyone can enjoy this! It's great served with the Baked Salmon Filets Dijon in the Seafood section of Allrecipes. The flavors melded very well. Serve with rice pilaf and you have a fantastic meal everyone will enjoy! C. Ferris

Slow Cooker Chicken with Mushroom Wine Sauce

This was so easy! A big hit with my husband who doesn't normally like chicken breasts because they are too dry. I used frozen breasts and added a bit of water at the end to dilute the salty flavor of the soup. Will definately add this to the list of favorite dinners.

Peanut Butter Chip Cookies I

Don't be fooled by this recipe. It is the same recipe you find on the back of a Reese's Peanut Butter Chips package. A few words are changed and Pat calls for butter flavored shortening instead of regular flavor or margarine. She does not include the Chocolate Chips. The recipe is good and worth trying if you like peanut butter.

Cooking Light magazine's Indian Chicken Curry

Very good curry recipe for boneless chicken lovers. My husband who is a big curry fan would not have known I used yogurt and tomato paste if I hadn't told him! I will definately make this recipe again. C.Ferris in China

The Best Rolled Sugar Cookies

This is a very good sugar cookie recipe. Easy to work with when chilled. It definately needs a "light" frosting or no frosting at all. I made these for my Christmas cookie packages and they were a hit. Will make again. C.Ferris in China

Soft and Chewy Peanut Butter Cookies

Beth's Spicy Oatmeal Raisin Cookies

I used this recipe for one of my Christmas cookies. It was a hit with everyone especially my husband. He couldn't keep his fingers out of the cookie jar!! I made two substitutions. I used Molasses sugar instead of brown sugar and only 2 1/2 cups instant oats. They were fabulous. Thanks Beth for the recipe. I will use this one all year. C.Ferris in China
