Best Apple Crumble
This was pretty darn good, but it uses an awful lot of butter and, I agree, there's a bit too much crumble. I also added a little cinnamon to the crust, and used brown sugar in the crumble. The custard powder was a nice touch, and I found it, of all places, at the local 99 Cents Only store. For only 99 cents! Finally, I overcooked my apples, so start watching them about halfway through to make sure you don't get applesauce. Overall, very nice!

Pork Tamale Pie
I was a bit disappointed by this, but I fear I may have misunderstood the directions. It isn't clear how to use the broth. After you simmer the pork, do you remove it from the broth, or put the entire thing into the cornmeal mixture? I did, and it came out too wet. Next time, I'll only use the broth to wet the cornmeal if it becomes too dry, but otherwise will remove the pork from the simmering broth before adding to the cornmeal mixture. I should also say that I made this with chicken and chicken broth instead of cooking the pork, to both save time and effort. I'll try again, but not terribly impressed with the first attempt.

Strawberry Cobbler II
This is dynamite. I also made it with cherries and it was fantastic. I add a tbl. of cinnamon to the crust and another to the glaze. In addition, I reduced the water for the fruit because it was a bit too watery (to 2/3 cup) and increased the cornstarch (to 1-1/2 tbl.). Serve with fresh whipped cream and you are in heaven!
