Chocolate Brunch Waffles

They tasted wonderful :)) We had them topped with Chocolate Chip ice cream, which helped coz they came out a little dry. My waffles tend to do that. Anyone with tips on preventing dryness?

Spinach and Pasta Salad

Fabulous. I don't use the brand products - just general pasta and general mccormick pesto, but this salad gets raves all around the neighbourhood and is always a special request for yard parties :)

I loved this... It tasted soo good. I didn't have jalapeno peppers so I substituted green peppers instead. It was very tasty. Works extremely well with Chicken Tandoori found on this site, and the combination has definitely become a keeper. Thank you Andi :)

Grilled Chicken with Herbs

This one I just loved. I had to choose a recipe that was ok for diabetics too, so I did a search for diabetes and this was one of the results... May I just say "oh mannnnnnnn" this was good. I love it, and I think this will be a keeper :)

Oven Roasted Red Potatoes

I just loved this. For Mommy's Day, it was my turn to cook, and I chose this, along with the grilled chicken and herbs and some stirfry veges. Man, we loved these taters :) Definite keeper and a great crowd pleaser. Thanks :)

Romantic Chicken with Artichokes and Mushrooms

I have never eaten artichokes before, so I thought I'd try this recipe. Hunny loved it, I wasn't so sure. For me, the mix of flavors was too strong. I might try it again with non-marinated artichokes to see if the fact that they were marinated, caused the flavors to be so strong. Else, I'll probably do what some of you suggested, substitute the artichoke for another vegetable. I did like the overal taste of it. Will try again, and will see how we go :)

Tandoori Chicken I

I combined the two Tandoori recipes (I and II) to make a wonderful combination. I substituted the spices from II for the allspice in this one. First time I did include the vege oil and the vinegar and forgot it the second time. I prefer it without, but that's just me :) I am not very good with rice - it kept turning up dry, but if I can figure out how to keep it moist, then I am sure I'l like this dish even more. Meanwhile it might be good to try it buttered noodles or something. In any case, this is a definite keeper. I love it, and will make again.

Tandoori Chicken II

I combine both tandoori I and tandoori II for my chicken Tandoori. I use the yoghurt and lemon juice from I and combine it with all the spices in this one. Then I leave it in the fridge for about 3-4 hours and place it in the oven for an hour. I tried it the first time with the vege oil and vinegar on top of everything I mentioned here (from I) and forgot it this time, and I liked it better this time. This is wonderful over some rice, tho you need to keep your rice moist, as there is no sauce. It might be better over buttered noodles, I don't know.

Restaurant-Style Chicken Scampi

I loved this one. After trying the chicken scampi at that Italian Restaurant Chain, I thought I'd cook it for my hunny. He loved it. That was late last year. I'll be making again this evening. My mouth is already watering at the thought :) Thanks so much for finding the secret :)

Tempeh Fajitas

I am not a vegetarian but this looked good so I thought I'd try it. This being a fajita recipe, I decided to prepare this with Zatarain's Spanish Rice, and the combination just made this a definite keeper and it may even become a staple for us. Thanks for the recipe Karen :)

Beef Samosas

We loved this! I didn't have any phyllo nor any other wrappers, and I didn't feel like going to the store to buy some, but I had some tortillas in the fridge. It was great! I topped it with Cheddar and Mozzarella cheese and grilled it in the oven for 5 minutes to melt the cheese. After we each had one, we made 2 more, but topped each with some medium salsa. The combination of samosa filling with the salsa topping just made it a perfect meal. It was given a Yes, please make this again, so I will :)

Thai Breaded Chicken Filets

It's a refreshing new taste that I hadn't had before; I thought I'd try it out, and well, my rating says it all :)) This one is a keeper. The easiness rating is 3 coz you need a blender to make the marinade, but apart from that - superb!
