Stuffed Eggplant with Shrimp and Basil

Pretty tasty! Easy, too! I used precooked frozen shrimp as that is what I had on hand. I just thawed it, then added it with the eggplant instead of sauteing them with the garlic. It worked out well as the shrimp were not over cooked. I will make this again!

These are awesome! My hubby and I love them. He loves to take them to work and even eat them cold. For those with issues of having too much filling leftover, I use the package of biscuit dough with 10 biscuits (instead of 8). The amount is perfect!

Beef Sirloin Steak with Baby Spinach

Delicious! I made a few changes per other reviewers suggestions and according to my family's tastes. I omitted the red pepper, added mushrooms, salt and ground pepper. Next time, I will half the vinegar. But, all in all, I was impressed. This was nice restaurant quality!

Turkey Wild Rice Soup II

Delicious and easy!! What a great way to use holiday leftovers! Although, we had no wild rice, so we used long grain rice instead and just followed the package's instructions to cook. It turned out great!

Pineapple Beets

I wanted to like this, but no such luck. I love beets and pineapple, but they didn't compliment each other for me. I made the recipe as is except with fresh beets. This recipe made the beets taste sour to me. The sweetness of the pineapple made the beets sour in comparison, I guess. I'll stick to sauteeing my beets with onions,salt & pepper and a little olive oil. That's currently my fave way to eat them.

Holiday Brie en Croute

WINNER!!!!! This is heavenly! I made it for a family party and it very quickly was gobbled up. I wish I had made another one. I'll make 2 next time. This will be a party staple from now on!

Golden Chicken and Autumn Vegetables

Delicious! The only thing I did differently was to sprinkle a bit of seasoning salt on the chicken before browning. I was afraid it might be too bland without it. It was perfect! Next time, I think I'll try the footnote ideas by adding wine, lemon juice and mustard. Sounds wonderful!

Candied Salmon

So good! However, the onions did not caramelize for me. Perhaps that's something I need to work on as I don't have experience in caramelizing onions. Anyway, it still tasted amazing and I will definitely make it again!

Best Chocolate Chip Cookies

The name of this cookie is the truth! They're the best! I brought them to a family party and my brother said not to tell grandma, but these cookies were better than hers! Another comment was, "Perfect!" For a slight variation, I like to use mini chocolate chips. The chocolate gets more evenly distributed that way...but regular chips are still great.

Baked Pork Chops I

Best pork chops I ever had and the hubby agrees! The flavor is amazing and it was so tender we were able to cut it with only our forks. This will be a regular dish in my meal rotation. Amazing!

Almond-Topped Fish

Edible, but not very yummy. I agree with other reviews that the flavors did not mesh well. I ended up scraping off the stuff on top in order to tolerate the fish underneath. I wanted to like this, but no such luck.

Eggplant Parmesan I

Heavenly! My hubby and I adore this dish. The only thing I do different is to omit the ricotta and add more mozzarella instead, but that's just a personal preference for me. This has become a regular recipe made in my house.
