Savory Filled Cottage Cheese Pancakes

These pancakes are a different twist on dinnertime, and I really like to make them. It's easy to just throw all of the ingredients in the blender and make the batter.. then while those are cooking, find whatever you have in the fridge (I used red bell pepper, mushroom, crushed garlic, cream cheese, sliced deli ham, sliced yellow onion) to make the filling. The cream cheese really added a nice creamy texture and made it kind of saucy. If I had some cream and Parmesan I probably would have used that.. but it was yumm!!!

Feta Cheese Foldovers

Changed the recipe around quiet a bit - used garlic and herb feta, added extra green onions, and put the mixture in phyllo dough shells instead of making fold-overs. Was super fast and easy with a food processor!

Apple Breakfast Bread

I liked this recipe as a base, but I deviated from it a bit. Used applesauce and some extra spices, and I used wayyy more apples than it called for; I like chunky breads.

Cranberry Brisket

I made this because of the high reviews and it sounded delicious, but I should have listened to the one person who said it was way too much flavor. There was too much onion seasoning - should have only used half or a quarter of the packet. And the cranberries were really pretty, they made a beautiful sauce around the brisket in my dutch oven, but it was too salty/tangy to even taste the meat.

Rhubarb Strawberry Crunch

This was DELICIOUS! I had double the filling (6 cups rhubarb and 6 cups strawberries) and filled a 9x13 no problem. The crust was the perfect amount to give it a thick layer. It was watery, which is the reason for four stars. I talked it over with my mom and she suggested tapioca, as did some other reviewers. I would like to try this again with the tapioca! Hopefully it will be a fiver.

Stuffed Eggplant with Shrimp and Basil

Usually I think there must be something wrong with a person who gives a recipe a low rating when every other rating is high. I really disliked this. I made it just as the recipe said. It looked really pretty and delicious, but it was mushy and tasted like bread crumbs with basil. The eggplant was a weird consistency and kind of spongey. I supposed I could have cooked it longer, but the cheese on top was warm and the stuffing was cooked thoroughly. It was dry, probably because of the bread crumbs... nice idea, didn't play out the way I had hoped.

Apple Walnut Salad with Cranberry Vinaigrette

I love this salad! Whenever I make it, I make extra dressing so we can have it to use for a while afterwards. I add feta because I love it, and I reduced the red onion to only a small amount just because I don't like to have onion breath. Other than that, it is amazing!
