Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Jan. 5, 2014
Did what others said and increased the flour by 1/2 cup and the baking soda by 1/2 tablespoon as well as cutting the salt to 1/2 teaspoon. Delicious!

Whole Wheat, Oatmeal, and Banana Pancakes

Reviewed: Jun. 14, 2012
Great recipe! I made it exactly as it is, except... 1. I halved it (and it made 6 pancakes [I used about 3 spoonfuls of batter to make each cake. The last one was a bit larger, though]--just as the recipe said it would. I ate 3 and was full) 2. I left out the dry milk powder 3. I used a food processor instead of a blender for the oats. 4. I threw in a whole banana although the recipe called for 1/2 a banana (since I halved it)--definitely a good choice! 5. I added a bit of cinnamon and a dash of nutmeg to the batter. Loved these. Very tasty. In the future I will double the amount of banana again and add cinnamon and nutmeg since that worked so well this time around.

Red Velvet Cupcakes

Reviewed: May 20, 2012
I just made the frosting (for some red velvet cupcakes--but not the ones from this recipe) and it was good. I would make it again.

Chantal's New York Cheesecake

Reviewed: May 19, 2012
I followed the recipe exactly...But I halved it and put it into a pre-made crust. (Thank goodness I halved it! Barely fit in the crust!) I followed another person's review and used a hand mixer for the first step and a wooden spoon for the rest. I tried really hard to just stir until incorporated, but last time I made cheesecake (was not with this recipe) I hadn't stirred enough...So this time I tried to stir it just enough...Baked for an hour (wasn't sure if I should bake it for less since it was smaller...) and it turned out a bit brown. Left it in the oven overnight and then put in the fridge all day. Lots of condensation on top of cake :( I wonder how to minimize that. Served it with fresh strawberries and it was quite good! The bites I had without strawberries were a little lacking in flavor, but my family didn't seem to agree with me--my sister raved about it and my mother said it was better than the cheesecake she had just had on a cruise. I would make this recipe again but I'm just wondering how I could add a little more flavor to it...

Baked Mac and Cheese for One

Reviewed: Jan. 19, 2012
I doubled it up since I was seriously craving mac and cheese...Omitted the hot sauce and added extra cheddar (used medium cheddar) to about 1 cup. I added the milk really slowly...I followed the rest of the instructions spot on. I cooked it in a loaf pan :) and let it sit for 10 minutes after getting out of the oven...I was hoping the sauce would settle a bit more because there really seemed to be a ton of sauce compared to the amount of macaroni...And it was quite yummy! One serving would have been fine if I wasn't super hungry. And the sauce ended up not being too much. A keeper recipe.

Cheater Pot Pie

Reviewed: Dec. 22, 2011
After reading several reviews I made several changes to the original recipe. I boiled 2.5ish chicken breasts w/salt, pepper, and onion powder. Greased a 9 inch pie crust, pressed some biscuits into the bottom, and cooked for 15 minutes once the oven preheated. I think 10 minutes would be better next time. I then combined 2 T butter, 1.25 cups chicken broth, and some onion on the stovetop. Mixed in 4 teaspoons of flour. Added 1 cup each of carrots, frozen corn, and frozen peas and 1 can of cream of chicken soup. Mixed it all together and let it cook...stirring frequently. I also added in some celery seed. After awhile I poured the mixture over the cooked biscuits. I took the rest of the biscuits (I used 2 7.5 ounce cans total) and flattened each one, placing each over the mixture. I had 2 biscuits left over, so I just ripped them into smaller pieces and placed them over the holes. Put in oven for 15 minutes (Pie dish started over flowing so I had to put it on my jellyroll pan, which doesn't fit in the oven...so last 8 minutes ish of cooking time the oven was ajar)...The verdict: Hubby and I both liked it. I think I will omit the biscuits on the bottom next time, though. And maybe I shouldn't flatten the biscuits...at least not so much. But, overall--YUM!

Easy Pizza Sauce III

Reviewed: Jul. 24, 2011
I followed a review and added 1/2 Tbs (dried) basil, 1/2 tsp sugar, and 1/2 tsp onion powder. I added the full amount of oregano, but I had dried oregano only--not sure if that is different from ground oregano. I also had fresh garlic--only put in 1 tsp...Sauce tasted swell on the hawaiian pizza I made! Not AMAZING, but no need to search for another recipe!

Four Egg Yellow Cake

Reviewed: May 30, 2011
I substituted 1 c. butter for the 1 c. shortening. Such a great cake! Moist, flavorful...not too sweet. Love it. I made cupcakes--the full batch made about 40 cupcakes (I filled them 1/2-3/4 of the way full, which was perfect, and baked them for 15 minutes per pan). This will be my go-to yellow cake recipe. No need to keep searching. Thank you so much for the recipe!

Strawberry Cake from Scratch

Reviewed: May 21, 2011
I was really, really excited about this cake. It smelled divine as I was making it... I divided the recipe in half because I wanted only one nine inch pan worth of cake--but it made enough for a nine inch plus a dozen cupcakes. Instead of cake flour I went with the 3/4 cup plus 2 T all-purpose flour + 2 T cornstarch = cake flour rule. I warmed up some frozen sweetened strawberries in the microwave and pureed them to make the strawberry puree. I followed the instructions exactly...but when my cake came out of the oven the middle had seriously sunk in. After waiting ten minutes after taking it out of the oven and flipping it upside down to take it out of the pan, the cake then depressed the other way...I will continue my review after trying the cake.

Lemon Square Bars

Reviewed: Apr. 10, 2011
Very good. I gave some to a neighbor and she liked them! Another reviewer suggested putting parchment paper in the pan for easy clean up--I am so glad that I followed their suggestion! Worked very well! A great combo of sweet/tangy...but there was a bit of a weird metallic taste to some of them...not sure why. A great recipe, though. Thanks!

Teriyaki Chicken Pizza

Reviewed: Apr. 10, 2011
Very good! My husband LOVED it! We will definitely make this again. I will probably add a bit more garlic next time...and I followed another review and only put a very thin layer of teriyaki sauce on--I will definitely put more on the pizza next time. I used Pillsbury pizza dough--just one 13 oz. package--and it was great. Thank you for the great recipe!

Fluffy French Toast

Reviewed: Apr. 3, 2011
This was a very good french toast recipe and I will definitely make it again. However, soaking the bread in the mixture made it too soggy--once I started just making sure each side was covered, it was much better. Served this with buttermilk syrup and strawberries. Delicious!

Swanson® Ultimate Mashed Potatoes

Reviewed: Mar. 17, 2011
Just made this for my hubby and I. I cut it down to two servings and did not use the bacon or light cream. Instead of the cream I used milk. I also did not really follow the proportions--I just added some of each until it tasted good. I great recipe! Will definitely make again!
