Hazel's Meatballs

Tried substituting ground turkey for ground beef, but ground turkey is much wetter, and I wound up having to add more bread crumbs. The sauce was great, but a little tart. I would omit the vinegar. Next time I will stick to the recipe and hope for tastier meatballs. Update: made recipe again using specified ingredients, and meatballs were terrific. My kids, usually very fussy, loved them! I did omit vinegar from the sauce and everyone said it was better.

Aunt Eileen's Stuffed Eggplant

Very good. Next time I might replace the breadcrumbs with cous cous and see what happens. If you don't spray the tops with olive oil before baking, the eggplant husk becomes dry. My husband liked this very much and he usually is not a fan of vegetarian dishes.

Sweet, Sticky and Spicy Chicken

This is like takeout without the drive! I added extra honey because my kids like things sweet; the sauce thickened up in about 15 minutes. Next time I would cut the chicken strips larger because the chicken does dry out easily.

Kelsey's Cheesy Bacon Breasts

Easy, fast, delicious weeknight meal. I did not fry the chicken ahead of time (did not want the added fat from frying in oil) and it was fine after 30 mins. in the oven. Waited until last 10 minutes to add cheese; I think if you cooked the cheese for 20-30 mins. it would be like a brick. I will definitely be making this one every week!

Ham Breakfast Braid

I used 2 1/2 Cups crumbled microwave bacon instead of ham (about 14 slices of bacon). At 25 minutes, the crescent dough was almost too brown. Tasted very good. Next time I will try it with puff pastry instead of crescent dough.

Zucchini Herb Casserole

Best vegetarian casserole ever! I skipped the garlic and it was still very tasty. Also, canned tomotoes worked fine. For those who find it bland, it may be due to the kind of oil used. I used avocado oil.

Baked Spaghetti

Made this with gluten-free pasta and it was terrific. Cottage cheese a little bland; will try ricotta next time. My husband liked this so much, he took the entire dish of leftovers on the road with him this week. I disagree that it is too much like lasagna; it is more cheesy and a lot easier to make!
