Quick Hoppin' John Soup

I added chopped & sauteed celery, green pepper, and onion to the soup. I did not have seasoned rice mix. It was delicious.

Quick Pasta Carbonara

This is a traditional rich Carbonara recipe. I added 1/2 cup chopped onions and substituted finely chopped cooked ham for the bacon. Be sure to add the peas, to counteract saltiness of bacon and cheese.

I tweaked the recipe by substituting Knorr Vegetable Soup Mix, cream cheese, and jicama. The recipe was good, but wished I added slices of turkey & ham.

Meaty Spaghetti Sauce

This healthy recipe calls for 6 vegetables + tomatoes. I couldn't wait to taste it. It was delicious even after only 30 minutes of cooking. It does need 2 hours or more to "marraige" the ingredients.

Chicken Piccata II

This recipe is delicious, but is not healthy. No egg is needed. Dredge in seasoned flour. Saute in 1/2 butter & 1/2 olive oil. Thicken lemon/water mixture with 2 tablespoons of cornstarch. Cook as directed.

Baba Ghanoush

I followed the recipe exactly and it was too tart. The AMOUNT OF EGGPLANT is imperative for a good result. Use a huge eggplant or two smaller ones. Be cautious adding the lemon juice and tahini. Taste before adding the full measure of lemon juice & tahini. Be sure to STIR THE TAHINI in the jar before measuring out the amount needed. I added mashed potatoes to counteract the sourness, but it didn't help much.

Pesto Sauce

Two important things to remember when making this recipe. CHECK AGE OF THE OLIVE OIL. Mine was old and rancid, the first time I made the recipe. Second, use a FOOD PROCESSOR only, never a blender. The food processor will retain identifiable ingredients.

The Best Potato Salad

This potato salad had the right proportion of mayonaise to mustard. I added: 3 stalks of finely chopped CELERY, one finely chopped GREEN PEPPER, and one jar of chopped PIMIENTOS.

Beet Bundt Cake

It was delicious, and tasted like a chocolate cake. I baked the beets baked for an hour instead of boiling them. The skin peeled off easily. I don't have a Bundt pan, so used two 9" cake pans. Lower the temperaure to 350 degrees and cook for thirty minutes.

The sauce was too thick to my liking, even though it was baked at 325 degrees F. Be careful buying canned tomatoes. Mine were extra high in salt content.

Curried Hummus

LOOKS LIKE MUSTARD I followed the directions, but it looked like mustard. Being from Texas, I like the Tex-Mex flavors better. When I make this recipe again, I will substitute CUMIN for curry powder.

Chili Rellenos Casserole

It tastes like chili relenos without the labor intensive individual ones. My casserole was DENSE, because I left out the 1/2 cup milk. The next time I make this recipe, I will BEAT THE EGG WHITES TILL FLUFFY, and fold in the canned milk/flour.

Classic Peanut Butter Cookies

I dumped the ingredients together and baked the dough immediately. I didn't sift the dry ingredients or cream the butters with the sugars. I didn't chill the dough. The cookies were delicous. Next time, I'll follow the directions.
