Cream Cheese Frosting II

I changed this recipe also, because all I had on hand was one package of cream cheese. I followed the suggestion of one reviewer and used the 8 oz. pkg. of cream cheese, 1/4 cup butter, two cups of confectioners sugar, but added a splash of vanilla, and about 2 tbsp of cocoa. It has a nice consistency, but the taste wasn't "out of this world" good. It was "last minute, had no other choice, used what I had on hand" good.

Fettuccine Alfredo V

I'm giving this recipe 4 stars because I've tried other recipes using cream cheese & they are by far better. I used an old recipe from my mother's magazine collection. I think it was a cooking magazine dated in the 80's. I loved that Alfredo sauce a whole lot better & will stick with it. This was good, but not as good as the other one.

Homemade Granola

I didn't have flaked coconut, so didn't use it. Like others reviewers I changed it up a bit. I added about a tbsp and a half of honey, and used virgin coconut oil instead of regular oil. I added dried cranberries, yogurt covered raisins, chopped pecans, and chopped almonds. It was a nice granola, but have made better. Google "Lazy granola", in my opinion, that recipe tastes better!

Real Italian Calzones

The crust was awesome!! I did change it up a bit. I used shredded mozzarella, a very small bit (about a tablespoon per calzone) of my own homemade pizza sauce, cream cheese slathered on the dough ( I didn't have ricotta on hand), chopped fresh spinach, chopped ham, onion, & green peppers. It was PERFECT!! I divided the dough into 4 pieces so my family could request different ingredients for each of their calzones. I was lucky to even get a taste!! I am only giving 4 stars because I didn't follow the recipe exactly as is. Just b/c I've never heard of authentic Italian calzone recipes using cheddar.

Fluffy Pancakes

To Die For Blueberry Muffins

These came out really dough-y. The muffin itself didn't have a nice taste to it at all! As another reviewer said, the crumb topping was good, but not good enough to make this a great muffin recipe. I won't be making these again.

Tomatillo Salsa Verde

I made a few changes to the recipe. I KNOW, it isn't the exact way, therefore, it's really not the recipe as some reviewers have said. But anyhoo, that being said, I threw in a couple of pieces of chopped green bell pepper into the blender, AND did not use any of the water I boiled the tomatillos & jalapeƱos in. Perfect consistency & not too watery as others said. I seeded one jalapeƱo & left the other as is. It was spiced perfectly (to my family's taste anyway). I also added the juice from one small lime (Key lime). We loved it! Just like the salsa verde they use/serve at authentic Mexican restaurants. Awesome!! :)

Colored Sugar

I used plastic sandwich baggies (separated in 7 baggies)& put 1/3 cup sugar w/5 drops of the primary colors in each one (used regular food coloring not gel). For red I used 9 drops of food coloring, orange used 2 red drops and 3 yellow and for purple 3 red drops and 2 blue. Then I spread the sugar on plates to dry for about an hour and a half. I stored them in thicker baggies (used for crafts). The only thing different from store bought stuff is the grain is finer. But more importantly I saved money!

Crispy Oven-Fried Fish Fillets

Could have been better...but TOTALLY my fault! I did not have Italian croutons, had to use Ritz crackers. Big mistake. Fish was too soft on inside, not crispy outside. Will definitely try again. Great alternative to frying!
